That’s why I love this easy fried chicken sandwich recipe. It’s quick to prepare, family friendly, and always a hit with the kids. Plus, it’s a great way to use up any leftover chicken you have in the fridge. Here’s how I make it: First I prepare the chicken. Place the chicken breasts between two pieces of plastic wrap on a cutting board. Using a meat mallet or rolling pin, pound the chicken until it’s about 1/2 inch thick.
