Beef and Eggplant Casserole: A Delicious and Easy Recipe for Stay-at-Home Parents As a stay-at-home parent, it can be difficult to find the time and energy to make a delicious, nutritious meal. That’s why I love this easy and delicious beef and eggplant casserole. It’s one of my go-to recipes that my family loves, and it’s sure to be a hit with your family, too! The story behind this recipe is one of necessity. My husband and I had recently become parents when I realized that I just didn’t have the time or energy to make complicated meals. We both worked full time, and he was often on the road for weeks at a time. I needed something that was easy to make, that didn’t require a lot of ingredients, and that my daughter would love. That’s when I came up with this beef and eggplant casserole. Ingredients: 1 lb ground beef 1 large eggplant, diced 1 onion, diced 2 cloves garlic, minced 1 can diced tomatoes (14 oz) 1 cup beef broth 1 teaspoon dried oregano Salt and pepper to taste 2 tablespoons olive oil Directions: 1. Preheat the oven to 350°F. Heat the olive oil in a large skillet over medium heat. Add the beef and cook until browned, stirring often. When cooked through, transfer the beef to a large bowl and set aside. 2. In the same skillet, add the onions, garlic, eggplant and tomatoes. Cook for 5 minutes or until vegetables are tender. Add the oregano, salt and pepper to taste, then stir in the beef broth until everything is combined. 3. Transfer the mixture to an 8x8 inch baking dish and top with the cooked ground beef. Cover with aluminum foil and bake for 25 minutes or until hot throughout. This casserole is so easy to make that even my daughter can help out! Plus, its hearty ingredients make it a great meal for busy families like ours who don’t have a lot of time for complicated cooking projects but still want something nutritious and delicious on their table every night. It’s become one of our favorite dishes since I first made it years ago!
