Grilled Chicken with Orange and Ginger Glaze: A Stay-at-Home Parent’s Story

As a stay-at-home parent, I often look for ways to make dinner more special and exciting. I want to make something that’s both delicious and easy to prepare, so my family can spend more time together instead of slaving away in the kitchen. That’s why I always turn to my favorite grilled chicken recipe with orange and ginger glaze. Not only is it incredibly tasty, but it also has a great story behind it!

This recipe is a combination of two of my favorite flavors: citrus and ginger. The orange zest and juice add a bright, tangy flavor, while the ginger gives it warmth and a spicy kick. Plus, the sweet glaze really brings together all the flavors in a way that’s hard to resist!

The story behind this dish began when I was a kid. My parents would often take us camping in the summertime, and one of our favorite activities was grilling chicken over an open fire. We’d marinate the chicken in orange juice, soy sauce, garlic, and ginger before cooking it over the hot coals. The smell of that marinade wafting through the air made my mouth water every time!

Ever since then, I’ve been determined to recreate that same flavor combination in my own kitchen. After trying out several different variations, I finally settled on this recipe for grilled chicken with orange and ginger glaze. It combines all of the flavors I loved as a kid with a few modern twists that make it even tastier. It’s become a family favorite ever since!

Ingredients:
• 4 boneless skinless chicken breasts
• 2 tablespoons olive oil
• 1/4 cup freshly squeezed orange juice
• 1 teaspoon orange zest
• 2 tablespoons freshly grated ginger
• 2 cloves garlic, minced
• 1/4 cup honey
• 1 tablespoon soy sauce
• Salt and pepper to taste
Instructions:
1. Preheat your grill or grill pan to medium-high heat.
2. Pat the chicken breasts dry with paper towels and season with salt and pepper on both sides.
3. In a shallow bowl, whisk together the olive oil, orange juice, orange zest, ginger, garlic, honey, and soy sauce until combined. Add the chicken breasts to the marinade and let sit for 5-10 minutes.
4. Once your grill is hot enough, place the chicken breasts on the grill or grill pan. Cook for 4-5 minutes per side or until cooked through (165°F).
5. Once cooked through, brush each side with some of the marinade from the bowl (reserve some for later). Cook for an additional 1-2 minutes per side or until lightly charred on each side.
6. Transfer to a plate or platter and drizzle with remaining marinade before serving warm! Enjoy!
