Add the soy sauce, sesame oil, ground ginger and salt & pepper to taste. Stir everything together until well combined. Take the pan off the heat and let it cool for 10 minutes before assembling the dumplings. To assemble the dumplings, place a spoonful of the pork mixture onto each wrapper. Fold the wrapper up into a triangle shape (or whatever shape you prefer) so that it seals around the filling. Make sure to press down firmly around all four edges so that it doesn’t open up when frying. Repeat this step until all of the wrappers are filled. Once your dumplings are assembled, heat the remaining oil in a large frying pan over medium-high heat. Place as many dumplings as you can fit into the pan without overcrowding them (I usually do about 6-8 at a time) and fry for 3-4 minutes or until they are golden brown on each side. Once they are cooked through, remove them from the pan using a slotted spoon or spatula – this will help keep them crisp! Serve your dumplings hot with soy sauce or your favorite dipping sauce on the side.
