It’s a favorite among stay-at-home parents, and it’s easy to make with just a few ingredients. The combination of sweet and savory flavors in the teriyaki sauce will make this dish a hit for dinner any night of the week. Ingredients: - 1 lb boneless skinless chicken thighs, cut into cubes - 2 tablespoons vegetable oil - 2 cloves garlic, minced - 2 tablespoons grated ginger - 1/2 cup soy sauce - 1/4 cup packed brown sugar - 1 teaspoon sesame oil - 2 tablespoons mirin (Japanese sweet rice wine) - 2 tablespoons sake (Japanese rice wine) - 2 tablespoons cornstarch - 1/4 cup water - Sliced green onions, for garnish (optional) Instructions: 1. Heat the vegetable oil in a large skillet over medium heat. Add the chicken cubes and cook for about 5 minutes, or until lightly browned on all sides. Add the garlic and ginger and cook for another minute. 2. In a small bowl, stir together the soy sauce, brown sugar, sesame oil, mirin, and sake until combined. Pour the mixture over the chicken in the skillet and stir to coat evenly. Bring to a simmer and cook for 8 minutes. 3. In another small bowl, whisk together the cornstarch and water until smooth. Add this to the skillet with the chicken and stir to combine. Simmer for an additional 3 minutes, or until the sauce has thickened and coats the chicken evenly.
