Not only is this meal quick and easy to make, but it’s also incredibly flavorful and the tartar sauce and lemon add the perfect amount of brightness to the dish. The ingredients for this meal are simple: fish fillets, flour, cornmeal, garlic powder, salt, pepper, eggs, oil for frying, tartar sauce, and lemons. To start, I combine the flour, cornmeal, garlic powder, salt, and pepper in a shallow dish. Then I dip the fish fillets in the egg mixture (two eggs beaten together with a few tablespoons of water) before coating them with the flour mixture. Next, I heat the oil in a skillet over medium heat. Once it is hot enough (I test it by dropping a pinch of flour in the oil; if it sizzles and bubbles immediately then it’s ready), I place the fish fillets in the skillet and cook them until they are golden brown on both sides. Once the fish is cooked through (I test it by inserting a fork into the center of one of the fillets; if it flakes easily then it’s done), I transfer them to a plate lined with paper towels to absorb any excess oil. Finally, I serve them alongside lemon wedges and tartar sauce for an extra zing!
