Beef and Mushroom Stir-Fry: A Quick, Easy and Delicious Meal for Busy Parents
As a stay-at-home parent, I know that finding time to prepare delicious meals can be challenging. That’s why I love this easy beef and mushroom stir-fry – it’s quick to make, doesn’t require too many ingredients, and tastes amazing! Plus, the whole family will love it.
The first time I made this dish was when my daughter was about a year old. She was already a great eater and loved trying different flavors, so I thought this would be a great way to introduce her to a variety of vegetables. As soon as she tried the stir-fry, she was hooked. She even asked for seconds!
I love making this stir-fry because it’s so versatile. You can use any combination of vegetables you have in your kitchen – bell peppers, carrots, mushrooms, bok choy – whatever you have on hand. And if you’re short on time, you can always use pre-cut vegetables from the store.
To make the stir-fry, start by prepping all of your ingredients. Slice the mushrooms and bell peppers into thin strips and mince the garlic and ginger. Then set aside the beef strips and mix together the sauce ingredients in a small bowl (soy sauce, honey, sesame oil, rice wine vinegar).
Heat some oil in a large skillet over medium heat and add the beef strips. Cook until lightly browned on both sides (about 3 minutes). Add the mushrooms and bell peppers and cook for an additional 2 minutes. Then add the garlic, ginger and sauce mixture to the pan. Cook for an additional 1 minute until everything is heated through and serve over cooked white or brown rice.
My family loves this beef and mushroom stir-fry – it’s definitely become one of our go-to meals on busy weeknights! Not only is it quick and easy to make, but it’s also so flavorful. It’s definitely a dish that both kids and adults can enjoy!
Ingredients:
1 pound flank steak sliced into thin strips
2 tablespoons vegetable oil
1 red bell pepper sliced into thin strips
1 cup sliced mushrooms
1 clove garlic minced
1 teaspoon grated ginger
3 tablespoons soy sauce
2 tablespoons honey
2 teaspoons sesame oil
1 teaspoon rice wine vinegar
Cooked white or brown rice for serving
