Beef and Bean Soup: A Hearty and Comforting Meal for Stay at Home Parents As a stay at home parent, finding time to make homemade meals can often seem impossible. Today I want to share one of my favorite recipes for beef and bean soup – it’s hearty, filling, and makes enough for the whole family. This soup combines savory ground beef with black beans and vegetables for a satisfying combination of flavors. The broth is made from beef stock, tomatoes, onions, garlic, and a variety of spices like cumin and oregano. This flavorful base is perfect for adding in your favorite veggies like carrots, celery, and potatoes. The combination of ingredients creates a hearty soup that will leave your family feeling full and content. I love this recipe because it’s easy to make ahead of time, so you can have dinner ready before your family even knows it’s on the table. I usually start by browning the ground beef in a large pot over medium heat. Once the beef is cooked through, I add in the chopped vegetables and let them cook until they are softened. Then I add the beans, beef stock, tomatoes, onions, garlic, and spices. I let the soup simmer for about an hour so all the flavors meld together. Ingredients: -1 lb ground beef -1 onion (diced) -3 cloves garlic (minced) -2 cups beef stock -1 can diced tomatoes -1 can black beans (drained and rinsed) -2 carrots (diced) -2 stalks celery (diced) -1 potato (diced) -1 teaspoon oregano -1 teaspoon cumin -Salt & Pepper to taste -Optional: Sliced avocado or cilantro for garnish Instructions: 1. In a large pot over medium heat cook the ground beef until no longer pink then drain any excess fat from the pot. 2. Add in diced onion and cook until softened then add garlic stirring occasionally so that it doesn't burn about 1 minute or so . 3. Pour in beef stock then add diced tomatoes , black beans , carrots , celery , potato , oregano , cumin , salt & pepper stirring everything together until combined . 4. Bring soup to a low boil then reduce heat to low & let simmer covered for about an hour stirring occasionally . 5 Serve with sliced avocado or cilantro if desired & enjoy !
