Ingredients:
-1 pre-baked pie crust
-2 tablespoons butter or olive oil
-1 cup diced onion
-1 cup diced bell pepper
-1 cup diced mushrooms
-1 cup grated cheese (cheddar, mozzarella, etc.)
-3 eggs
-1 cup milk
-Salt and pepper, to taste
Instructions:
1. Preheat oven to 375°F.
2. Heat butter or olive oil in a large skillet over medium heat. Add onions, peppers, and mushrooms and sauté until softened, about 5 minutes. Remove from heat and stir in grated cheese until melted.
3. Spread vegetable mixture into pre-baked crust.
4. Beat eggs and milk together in a medium bowl until well blended, then pour over vegetables in the crust. Sprinkle with salt and pepper, if desired.
5. Bake for 25 minutes or until egg is set and top is golden brown. Let cool for 10 minutes before serving warm or at room temperature. Enjoy!
