The story behind this recipe is quite interesting. I was recently visiting my mother-in-law who lives in the south. She surprised us with a delicious dinner of shrimp and squash casserole. It was so good that my family asked her to share the recipe with us. We’ve been making it ever since!

Ingredients:
1 package (16 ounces) frozen cooked shrimp, thawed & drained
1 can (15 ounces) sliced yellow squash, drained
1 can (10 ounces) cream of celery soup
1/2 cup mayonnaise
1/2 teaspoon garlic powder
1/4 teaspoon pepper
1/4 cup dry bread crumbs
2 tablespoons butter, melted
1/4 cup grated Parmesan cheese
Directions:
Preheat oven to 350°F. Grease an 8-inch square baking dish with cooking spray. In a large bowl, combine shrimp, squash, soup, mayonnaise, garlic powder and pepper; mix well. Spoon into prepared baking dish. In a small bowl, combine bread crumbs, butter and Parmesan cheese; mix well and sprinkle over shrimp mixture in baking dish. Bake 30 minutes or until bubbly and golden brown on top. Let stand 10 minutes before serving.
