Goulash: A Heart-Warming Home-Cooked Meal for Busy Stay-at-Home Parents As any stay-at-home parent knows, it’s hard to find the time and energy to cook a wholesome meal while taking care of children. That’s why Goulash is such a great option for busy days. Not only is this classic Hungarian dish easy to make, but it’s also incredibly comforting and flavorful. Plus, it’s a great way to use up leftovers in the fridge. Read on for my tried and true Goulash recipe that’s sure to be a hit with your family! Ingredients: 1 tablespoon olive oil 1 onion, diced 2 cloves garlic, minced 2 teaspoons paprika 1 teaspoon dried oregano 1/2 teaspoon salt 1/4 teaspoon black pepper 1 teaspoon sugar 3 cups beef broth 2 tablespoons tomato paste 1 pound ground beef 4 cups cooked macaroni noodles 1 cup frozen mixed vegetables (corn, peas, carrots, etc.) Instructions: 1. Heat the olive oil in a large pot over medium heat. Add the onion and cook until softened, about 5 minutes. Add the garlic and cook for an additional minute. 2. Add the paprika, oregano, salt, pepper, and sugar and stir to combine. Cook for 1 minute more. 3. Add the beef broth and tomato paste and stir to combine. Bring the mixture to a simmer and simmer for 10 minutes, stirring occasionally. 4. Add the ground beef and cook until browned, about 8 minutes. Add the cooked macaroni noodles and frozen vegetables and stir to combine. Simmer until heated through, about 5 minutes more. 5. Serve warm with your favorite toppings (sour cream or shredded cheese). Enjoy!
