On the other hand, I don’t always have the opportunity to do things for myself. When I cook, however, I get to take a break from my daily parenting duties while still nurturing my family. Cooking is therapeutic for me and so today, I'd like to share one of my favorite recipes - grilled chicken with pineapple glaze. This recipe is full of flavor but simple enough that even a stay-at-home parent can make it in no time. The best part is that it takes less than an hour to prepare and cook, and it’s so delicious that my family always devours it in minutes! The story behind this recipe is actually quite funny. One summer day, my husband and I were grilling some chicken on the barbecue when we noticed that there was a container of pineapple glaze sitting on the kitchen counter. We decided to be adventurous and put some of the glaze on the chicken before throwing it back onto the grill. What we got was a sweet, smoky flavor that was totally unexpected but completely delicious! We’ve been making this grilled chicken with pineapple glaze ever since! Ingredients: • 2 pounds boneless, skinless chicken breasts • 2 tablespoons olive oil • 1 teaspoon garlic powder • 1 teaspoon paprika • Salt and pepper to taste • 1/2 cup pineapple glaze Instructions: 1. Preheat your grill to medium-high heat. 2. Rub the chicken breasts with olive oil, garlic powder, paprika, salt and pepper. 3. Place the chicken breasts on the grill and cover with a lid. Grill for 8 minutes on each side or until cooked through (internal temperature should be 165F). 4. Brush each side of the chicken breasts with pineapple glaze and cook for an additional minute on each side or until glaze is lightly charred. 5.
