Grilled Shrimp with Basil Pesto

As a stay at home parent, I often find myself looking for creative ways to liven up the same old meals that my family has grown tired of. One of my favorite meals to cook on the grill is grilled shrimp with basil pesto. Not only is it a great way to get my family to eat healthy, but it’s also incredibly easy to make. The flavors of the pesto and the shrimp combine perfectly for a delicious meal that everyone in my family loves.

Ingredients:
1 pound of raw shrimp, peeled and deveined
1/4 cup of freshly grated Parmesan cheese
1/4 cup of extra-virgin olive oil
2 cloves of garlic, minced
2 tablespoons of freshly squeezed lemon juice
1/2 teaspoon of sea salt
1/4 teaspoon of freshly ground black pepper
1/2 cup of tightly packed fresh basil leaves

Instructions:
1. Preheat your grill to medium-high heat.
2. In a small bowl, combine the Parmesan cheese, olive oil, garlic, lemon juice, salt and pepper and mix until everything is evenly combined. Set aside.
3. Place the shrimp onto skewers and place them onto the preheated grill. Grill for 3-4 minutes per side or until they are cooked through. Remove from the heat and let cool slightly.
4. Place the basil leaves into a food processor and pulse until they are finely chopped. Add in the Parmesan cheese mixture and pulse again until everything is well combined. The pesto should be thick and creamy.
5. Drizzle the pesto over the cooled grilled shrimp and serve immediately.

Once I serve this dish to my family, they can’t get enough! I love hearing them rave about how delicious it is every time I make it! I’m also proud that I can make such a flavorful dish without spending too much time in the kitchen, which leaves me more time to spend with my family or working on other projects around the house.

One time when I made this dish, we were having a few friends over for dinner when my son came into the room with his own creation – grilled shrimp with basil pesto! He had seen me making it earlier that day and decided he wanted to try his hand at cooking too! Everyone was so impressed that he had made his own dish – it was definitely a proud mom moment for me! It just goes to show that even kids can have fun in the kitchen and make something delicious for their families!
