Fried Fish with Mango Salsa Recipe

As a stay-at-home parent, I’m always looking for new, delicious recipes to make for my family. Recently, I’ve been experimenting with Caribbean flavors, and one of my favorites is this Fried Fish with Mango Salsa recipe. The combination of crunchy fried fish with the sweet and spicy salsa is a hit. Not only is it delicious, it’s also easy to make. Plus, it’s healthy and sure to be a crowd-pleaser.

When I make this recipe, I always think of my grandmother, who was from Trinidad. She used to make the most amazing fried fish that I can still taste in my memories. With this recipe, I’m able to recreate a bit of the flavor of her traditional dish with a modern twist.

Ingredients:
For the Fish:
• 2 pounds of white fish fillets (I like tilapia or cod)
• 1 cup all-purpose flour
• 1 teaspoon garlic powder
• 1 teaspoon onion powder
• Salt and pepper to taste
• 1 cup vegetable oil for frying
For the Mango Salsa:
• 2 ripe mangoes (peeled and diced)
• 2 jalapenos (seeds removed and minced)
• 1/4 cup red onion (diced)
• 1/4 cup cilantro (chopped)
• 2 tablespoons lime juice
• Salt and pepper to taste

Directions:

1. Begin by preparing the fish. Place the flour in a shallow bowl or plate. To the flour add garlic powder, onion powder, salt and pepper. Mix together until ingredients are evenly distributed then set aside.
2. Heat oil in a large skillet over medium-high heat until hot. Take one piece of fish at a time and dredge in flour mixture until lightly coated on all sides.
3. Place the fish in the hot oil and fry until golden brown, about 4 minutes per side. Remove from heat and set aside on a plate covered with paper towels to absorb excess oil.
4. Prepare the mango salsa by combining all ingredients in a medium bowl and stirring together until combined. Taste and adjust seasoning as needed with salt and pepper if desired.
5. Serve the fried fish with mango salsa and enjoy!
