Shrimp and Tomato Pasta – An Engaging Recipe for Stay at Home Parents
As a stay at home parent, there’s nothing quite like a delicious home cooked meal. This comforting shrimp and tomato pasta is the perfect solution to a busy day. It’s quick, easy, and sure to be a hit with the whole family. Plus it’s inexpensive, so you can make enough to feed everyone without breaking the budget. Here’s what you’ll need to get started:
Ingredients:
-1 lb of shrimp (peeled and deveined)
-1/2 lb of spaghetti noodles
-3 cloves of garlic (minced)
-1 can of diced tomatoes (drained)
-2 tablespoons of olive oil
-Salt and pepper to taste
-1/4 cup of fresh parsley (chopped)
Instructions:
1. Begin by bringing a large pot of salted water to a boil. Add the spaghetti noodles and cook according to package directions. Drain and set aside.
2. Heat the olive oil in a large skillet over medium heat. Once hot, add the garlic and cook until fragrant, about 1 minute. Then add the shrimp and season with salt and pepper. Cook for 3-4 minutes until the shrimp is cooked through.
3. Add the diced tomatoes to the skillet and stir to combine. Cook for an additional 3 minutes until the tomatoes are softened.
4. Add the cooked spaghetti noodles to the skillet and stir until everything is combined. Taste for seasoning and adjust if needed.
5. Serve topped with fresh parsley and enjoy!
As I prepared this recipe for my family one evening, I couldn’t help but think back on our very first family vacation together when we first tasted this dish in Italy several years ago! It was such an unforgettable trip that brought us closer than ever before; we laughed, we explored, we ate…lots of delicious Italian food! One particular dish that stood out above all others was this shrimp and tomato pasta dish, made up of simple yet flavorful ingredients that left us wanting more with each bite!
