Nacho Night: A Perfect Stay at Home Parent Activity For stay at home parents, finding activities to do with their children that keep everyone entertained can be a challenge. One of our family’s favorite ways to bond and have fun is Nacho Night. It’s a great way to get the kids involved in the cooking process, while also giving them a delicious dinner that they can customize to their own tastes. To start, gather your ingredients. You’ll need tortilla chips, shredded cheese, diced onions and peppers, diced tomatoes, black olives, jalapeno peppers (optional), ground beef or chicken, taco seasoning, and refried beans. Once you have everything ready to go, it’s time to get started on the nachos! Begin by preheating your oven to 350 degrees Fahrenheit. In a large skillet over medium heat, cook the ground beef or chicken until it is cooked through. Add in the taco seasoning and mix well. Once the mixture is cooked through, set aside and begin assembling the nachos. In a large baking dish or oven-safe skillet layer half of the tortilla chips. Evenly spread the refried beans over the chips and sprinkle with half of the cheese. Layer on half of the cooked meat mixture and top with remaining chips and cheese. Sprinkle on the onion, peppers, tomatoes, olives, and jalapenos (optional). Bake for 15-20 minutes until cheese is melted and bubbly. Once finished baking remove from oven and let cool for a few minutes before serving. Serve with your favorite nacho toppings such as sour cream, guacamole, salsa or hot sauce. Enjoy! Nacho night has become a tradition in our house on a weekly basis as it’s an easy way to get everyone involved in cooking dinner while still having a delicious meal that everyone will enjoy! It’s also a great way to sneak in some extra veggies for picky eaters as well as teach kids about kitchen safety and knife skills while prepping all of their favorite ingredients for the nachos.
