“Pasta Perfection: A Stay-at-Home Parent’s Guide to Delicious Dinners!”

As a stay at home parent, I know how important it is to provide nutritious and delicious meals for my family. Among my children’s favorite meals is this simple yet satisfying recipe for Creamy Penne Pasta. Not only does it pack in plenty of flavor, it’s also a great way to sneak in some vegetables. In fact, this recipe is so easy that my kids often help me make it!
Ingredients:
-1 pound penne pasta
-2 tablespoons olive oil
-2 cloves garlic, minced
-1 small onion, diced
-1 red bell pepper, diced
-1 cup baby spinach leaves
-1 cup heavy cream
-1 cup Parmesan cheese, grated
-Salt and pepper to taste
Instructions:
1. Bring a large pot of salted water to a boil. Add the penne pasta and cook until al dente, about 10 minutes. Drain and set aside.
2. Heat the olive oil in a large skillet over medium heat. Add the garlic and onion and cook until softened, about 5 minutes. Add the red bell pepper and cook for an additional 3 minutes.
3. Add the baby spinach leaves and cook until wilted, about 2 minutes. Stir in the heavy cream and Parmesan cheese and season with salt and pepper to taste. Simmer for 5 minutes or until sauce has thickened.
4. Add the cooked pasta to the sauce and toss to coat evenly. Serve immediately with extra Parmesan cheese if desired.
This Creamy Penne Pasta is such a hit in my house that I often make extra for leftovers! Every time I make it, I’m reminded of my grandmother’s pasta recipes from when I was a kid growing up in Italy. She used to make the most amazing dishes that were always so flavorful yet so simple at the same time. Her recipes were always so comforting and reminded me of home no matter where I was living in the world at the time. This Creamy Penne Pasta is no exception – it’s just as comforting as my grandmother’s recipes but much easier to make! It’s one of those recipes that you can feel good about feeding your family because not only is it delicious but it also packs in plenty of nutrients from all of those vegetables!
