“Quick and Easy Shrimp and Veggie Stir-Fry: The Perfect Solution for Busy Stay-at-Home Parents!”

Staying at Home and Making a Delicious Shrimp and Vegetable Stir Fry with Noodles

As a stay-at-home parent, I know the importance of having quick and delicious recipes that can be thrown together in no time. Today I’m sharing my go-to favorite, a Shrimp and Vegetable Stir Fry with Noodles. Not only is it incredibly delicious, but it’s also incredibly easy to make!

I remember the first time I ever made this dish for my family. We had just moved into our new home, and I wanted to take a night off from unpacking boxes to make something special. My family loves seafood, so I thought making a shrimp stir fry would be the perfect way to celebrate.

I began by gathering my ingredients: one pound of large shrimp, two tablespoons of vegetable oil, two cloves of garlic (minced), two cups of vegetables such as carrots, bell peppers, snap peas, mushrooms, onions, etc., one tablespoon of fresh ginger (minced), one tablespoon of soy sauce, one tablespoon of rice vinegar, one tablespoon of sesame oil and eight ounces of cooked noodles (I like to use ramen).

Once everything was prepped and ready to go, I heated a large skillet over medium-high heat. Once the skillet was hot, I added the vegetable oil and let it heat up. Then I added the garlic and ginger and cooked them for about thirty seconds until they were fragrant. Next I added the vegetables and cooked them until they were crisp-tender. Then I added the shrimp and cooked them until they were just cooked through (about two minutes).

Finally, I added the soy sauce, rice vinegar and sesame oil to the skillet and stirred everything together. Once everything was combined, I added the cooked noodles to the skillet and stirred everything together until everything was evenly coated with the sauce.

My family absolutely loved this dish! The combination of flavors was incredible – sweet shrimp with crisp vegetables and savory noodles was just perfect. This has definitely become a family favorite in our house – we love making it for special occasions or just on busy weeknights!
