Staying at Home with Beef Stir-Fry with Vegetables
As a stay-at-home parent, making meals can be both a challenge and a joy. With limited time and energy, it’s important to find recipes that are easy to make but still delicious and nutritious. One of my favorite go-to meals is beef stir-fry with vegetables, which is a great way to get a balanced meal on the table in just 30 minutes.
This recipe is full of flavor and packed with nutrition. I love that I can use whatever vegetables I have on hand, making it an easy way to use up whatever produce I have in the fridge. And the best part? It’s so simple to make! All you need is a few basic ingredients and 30 minutes to get a delicious dinner on the table.
Ingredients:
• 1 pound lean ground beef
• 1 onion, diced
• 2 cloves garlic, minced
• 2 cups chopped vegetables (I like bell peppers, carrots, mushrooms, and broccoli)
• 2 tablespoons olive oil
• 2 tablespoons soy sauce
• 2 teaspoons sesame oil
• 2 teaspoons cornstarch
• 2 tablespoons water
• Salt and pepper to taste
Instructions:
1. Heat 1 tablespoon of olive oil in a large skillet over medium heat. Add the ground beef, onion, and garlic and cook until the beef is browned and the onion is softened, about 5 minutes.
2. Add the remaining tablespoon of olive oil to the skillet along with the chopped vegetables. Cook for 5 more minutes until the vegetables are tender-crisp.
3. In a small bowl, whisk together the soy sauce, sesame oil, cornstarch, water, salt and pepper until combined. Pour this mixture over the beef and vegetables in the skillet and cook for an additional 3 minutes until thickened. Serve warm over rice or noodles.
This recipe has become one of my favorites because it’s so versatile – you can use whatever vegetables you have on hand or switch up the seasonings to make it your own. Plus, it’s quick enough that I can get dinner on the table after I’ve put my kids down for bed without having to worry about being too exhausted to cook afterwards. It’s also one of my family’s favorites – they always request it when they come over for dinner!
I love being able to provide my family with nutritious meals in such a short amount of time while still enjoying the process of cooking – something that I think can be hard to achieve as a stay-at-home parent. Beef stir-fry with vegetables is one of those recipes that helps me do just that!
