Introducing Tandoori Chicken – A Delicious Recipe for the Stay at Home Parent As a stay at home parent, finding the time to prepare delicious meals can be challenging. We are constantly looking for recipes that are quick and easy to prepare, while still being healthy and flavorful. One of my favorite recipes is Tandoori Chicken. It is an Indian-inspired dish, rich in flavor and spices, and it offers a healthy alternative to traditional fried chicken. Plus, it only takes about 30 minutes to prepare. Tandoori Chicken originated in India, where it was traditionally cooked in a tandoor oven. The classic version of the dish is marinated in a blend of yogurt, garlic, ginger and spices, then grilled or roasted in a clay oven. It has become increasingly popular over the years, and today there are many variations of this delicious recipe all over the world. Ingredients: -1 1/2 lbs chicken thighs -1 cup plain yogurt -2 cloves garlic, minced -2 teaspoons grated fresh ginger -2 teaspoons garam masala -1 teaspoon ground cumin -1 teaspoon ground coriander -1/4 teaspoon cayenne pepper -Juice of 1 lime -Salt and pepper to taste -2 tablespoons olive oil Instructions: 1. In a large bowl, combine yogurt, garlic, ginger, garam masala, cumin, coriander, cayenne pepper and lime juice. Stir until ingredients are well blended. 2. Place chicken thighs in bowl with marinade and mix until chicken is completely coated. Cover bowl with plastic wrap and place in refrigerator for at least 2 hours (or up to overnight). 3. Preheat oven to 375 degrees F (190 degrees C). Line a baking sheet with foil and lightly coat with olive oil. 4. Place chicken thighs on baking sheet and bake for 20 minutes or until internal temperature reaches 165 degrees F (74 degrees C). Turn chicken over halfway through cooking time to ensure even cooking on both sides. Once your Tandoori Chicken is finished cooking, you can serve it with your favorite sides such as naan bread or rice pilaf for a delicious meal that is sure to please everyone!
