Vegetable and Tofu Stir-Fry with Noodles
As a stay-at-home parent, there’s nothing quite like the feeling of whipping up a delicious dinner for the whole family. That’s why I love this Vegetable and Tofu Stir-Fry with Noodles. It’s so easy to make, and it’s packed with flavor! The best part is that it’s also incredibly healthy. The combination of fresh vegetables, protein-packed tofu, and nutrient-rich noodles makes it the perfect meal for any family.
I first discovered this Vegetable and Tofu Stir-Fry with Noodles on a chilly autumn afternoon. My toddler was napping, and I decided to take a break from my typical parenting duties by getting creative in the kitchen. I knew I wanted to make something healthy but also satisfying, so I raided our pantry for ingredients. After examining what we had on hand, I settled on making a vegetable and tofu stir fry with noodles.
I began by heating up some sesame oil in a large skillet over medium heat. Once the oil was hot, I added some diced onion, garlic, and ginger. After sautéing these aromatic vegetables until they were fragrant and slightly softened, I added cubed extra-firm tofu to the mix. Once the tofu was lightly browned, I tossed in some sliced bell peppers and broccoli florets. After giving everything a good stir, I added some shiitake mushrooms and bean sprouts before pouring in a mixture of soy sauce and hoisin sauce to give it that signature Asian flavor.
Once everything was cooked through and fragrant, I tossed in some cooked ramen noodles to give it that classic stir-fry texture. To finish things off, I added some scallions for an extra bit of crunch and color.
The result was an incredibly flavorful dish that everyone at the table seemed to enjoy! The combination of crisp vegetables with savory tofu and nutrient-rich noodles made for an incredibly filling meal that satisfied my entire family’s hunger cravings. Plus, since this Vegetable and Tofu Stir Fry with Noodles is so easy to make, it’s become one of my go-to dishes when time is tight but we still want something tasty for dinner!
Ingredients:
• 2 tablespoons sesame oil
• 1 small onion, diced
• 2 cloves garlic, minced
• 1 tablespoon freshly grated ginger
• 1 block extra firm tofu, cubed
• 1 red bell pepper, sliced
• 2 cups broccoli florets
• 8 ounces shiitake mushrooms, sliced
• 1 cup bean sprouts
• 3 tablespoons soy sauce
• 2 tablespoons hoisin sauce
• 4 cups cooked ramen noodles
• ¼ cup chopped scallions (optional)
