“The Deliciously Easy Shrimp Po’ Boy: A Stay-at-home Parent’s Guide to Comfort Food”

Shrimp Po’ Boy Sandwich Recipe
As a stay at home parent, I’m always looking for delicious, easy recipes that my family will enjoy. Today I’m sharing my favorite recipe for a shrimp po’ boy sandwich. This classic New Orleans sandwich has a crispy exterior, a savory interior and plenty of flavor. It’s an excellent way to use up leftover cooked shrimp and can be served as either a meal or an appetizer.
Ingredients
• 2 cups cooked shrimp, peeled and deveined
• 4 tablespoons butter, melted
• 2 tablespoons mayonnaise
• 2 teaspoons Dijon mustard
• 2 teaspoons Worcestershire sauce
• 1 teaspoon garlic powder
• 1 teaspoon onion powder
• 1/2 teaspoon paprika
• 1/4 teaspoon cayenne pepper
• 4 hoagie rolls or sub rolls, split in half lengthwise
• 4 slices provolone cheese (optional)
• 4 lettuce leaves
• 8 slices pickled jalapenos (optional)
• 8 slices tomato
Instructions
1. Preheat the oven to 350 degrees Fahrenheit.
2. In a medium bowl, mix together the butter, mayonnaise, Dijon mustard, Worcestershire sauce, garlic powder, onion powder, paprika and cayenne pepper until well combined. Add the cooked shrimp and stir until the shrimp is coated with the sauce.
3. Place the hoagie rolls on a baking sheet and spread 1 tablespoon of the sauce from the bowl on each roll half. Top each roll half with a slice of provolone cheese (optional). Bake for 5-7 minutes or until the cheese is melted and golden brown.
4. Divide the shrimp mixture evenly among the four rolls and top with lettuce, pickled jalapenos (optional) and tomatoes. Serve immediately. Enjoy!
A Story of Shrimp Po’ Boy Sandwiches: A New Orleans Tradition
My family has been living in New Orleans for generations, so it’s no surprise that I have a special place in my heart for the city’s beloved Po’ Boy sandwiches. As a child, I would often accompany my dad to lunch at our favorite spot in town – The French Quarter Deli – where we would always get the same thing: shrimp Po’ Boy sandwiches! The combination of lightly fried shrimp topped with creamy mayo and tangy pickled jalapenos was simply irresistible! Even as an adult now living elsewhere, I still make sure to include this classic sandwich in our regular meal rotation whenever possible – it never fails to bring back fond memories of childhood trips to New Orleans with my dad!
