Beef and Onion Soup – An Engaging Blog for Stay at Home Parents
As a stay-at-home parent, I know it can be difficult to find time to cook. But sometimes it can be really rewarding to make something special, like a hearty beef and onion soup. It’s a delicious, filling dish that’s easy to make and will get your family excited about mealtime. Plus, it’s a great way to use up leftover beef and vegetables.
This beef and onion soup recipe is easy enough for even the busiest of parents to make. It only takes around 45 minutes to prepare and yields enough soup to feed 4-6 people. The ingredients you’ll need are 1 tablespoon of olive oil, 1 pound of lean ground beef, 1 large onion (chopped), 2 cloves of garlic (minced), 2 cups of beef broth, 1 can of diced tomatoes, 2 tablespoons of Worcestershire sauce, 1 teaspoon of Italian seasoning, ¼ teaspoon of black pepper and ½ cup of diced carrots.
To begin, heat the olive oil in a large pot over medium heat. Once the oil is hot, add in the ground beef and onion. Cook the mixture until the beef is cooked through and the onions are lightly browned. Next, add in the garlic and cook for an additional 2 minutes. Then pour in the beef broth, diced tomatoes, Worcestershire sauce and Italian seasoning. Bring the mixture to a boil then reduce the heat to low and let it simmer for 15 minutes.
Next, add in the black pepper, carrots and any other desired vegetables (e.g., celery or mushrooms). Cover the pot with a lid and let it simmer on low heat for 20 minutes or until all of the vegetables are tender. Once everything is cooked through, season your soup with salt and pepper to taste. Serve your hearty beef and onion soup with some freshly baked bread or rolls for a complete meal!
When I make this soup I like to think back to when I was growing up on my family’s farm in rural Kansas. We had cattle that we would often butcher for food throughout the year, so my mom would use lots of beef in her soups – like this one! Beef was always plentiful for us growing up, as were onions from our garden. This soup reminds me of my childhood; it brings back fond memories of home-cooked meals shared with my family at our kitchen table.
