Beef Teriyaki Recipe for the Stay at Home Parent As a stay-at-home parent, there are times when it feels like you are in a never-ending cycle of cooking, cleaning and taking care of your family. I know this all too well, as I have been a stay-at-home parent for the past eight years. One of my favorite recipes to make during those hectic times is beef teriyaki. Not only is it quick and easy to make, but it is also delicious and nutritious. This recipe requires just a few simple ingredients, and can be prepped and cooked in under an hour. Ingredients: • 1 lb of flank steak • 1/2 cup of soy sauce • 1/4 cup of honey • 2 tablespoons of sesame oil • 2 cloves of minced garlic • 1 teaspoon of freshly grated ginger • 2 tablespoons of cornstarch or arrowroot powder • 2 tablespoons of water • Salt and pepper to taste Instructions: 1. Begin by slicing the flank steak into thin strips. Place the strips into a bowl and season them with salt and pepper. 2. In a separate bowl, mix together the soy sauce, honey, sesame oil, garlic, and ginger until everything is evenly distributed. Set aside. 3. Heat up a large skillet over medium-high heat and add in the seasoned steak strips. Cook for about 4 minutes on each side or until they are cooked through. 4. Pour the teriyaki sauce over the steak strips and reduce the heat to low. Simmer for about 5 minutes or until the sauce has thickened and coated the steak strips evenly. Remove from heat and set aside. 5. In a small bowl, mix together the cornstarch or arrowroot powder with two tablespoons of water until everything is evenly combined. Pour this mixture into the skillet with the teriyaki sauce and stir quickly to avoid lumps from forming. Simmer for another 5 minutes or until the sauce has thickened even more. Remove from heat and serve over white rice or noodles with a side of steamed vegetables if desired. My family loves this recipe for its delicious flavor and quick cooking time; it’s truly one of our favorites! When I make beef teriyaki for dinner, my kids always get excited about what I’ve cooked up for them that night – even though it’s something they’ve probably had before!
