    Shrimp and Vegetable Fried Rice

    As a stay at home parent, I want to provide the best meals for my family. I’m always looking for new recipes that are easy to prepare, healthy and delicious. One of my favorite recipes is Shrimp and Vegetable Fried Rice. It’s a great way to get the kids involved in the kitchen as they can help with the chopping and stirring of the ingredients. Plus, it’s full of protein, fiber and vitamins from the vegetables.

    When I was growing up, my mom used to make this dish for dinner. She would always fry up some shrimp with garlic and ginger before adding in the vegetables. The smell of garlic and ginger filled the kitchen and I would always be so excited to eat it! The mix of colors from the shrimp, vegetables and rice was so beautiful that it felt like we were eating a rainbow on our plates.

    To make this dish, you’ll need a few simple ingredients: 1 pound of raw shrimp (peeled and deveined), 2 cups of cooked white rice, 1/2 cup of frozen peas and carrots, 1/4 cup of diced onions, 2 cloves of garlic (minced), 1 tablespoon of freshly grated ginger, 2 tablespoons of soy sauce, 1 teaspoon of sesame oil, 2 tablespoons of vegetable oil and salt & pepper to taste.

    To start, heat the oil in a large skillet over medium heat. Add in the onions and garlic and sauté for about two minutes until softened. Add in the shrimp and sauté until just cooked through (about three minutes). Then add in the peas & carrots along with the ginger, soy sauce and sesame oil. Sauté for another minute or two then add in the cooked white rice stirring everything together until combined. Add salt & pepper to taste then remove from heat.

    This Shrimp & Vegetable Fried Rice dish is a great meal that can be enjoyed by everyone! It takes less than 30 minutes to make which makes it perfect for busy weeknights when you don’t have a lot of time to spend in the kitchen.
