    As a stay at home parent, it can be challenging to find the time to make a delicious and healthy dinner for the family. That’s why I love this easy and flavorful grilled pork chop and vegetable recipe. With just a few simple ingredients, you can have a delicious dinner on the table in no time. Plus, the leftovers are great for lunch the next day.

    Ingredients:

    -4 pork chops (boneless, trimmed of fat)
    -2 tablespoons olive oil
    -2 teaspoons garlic powder
    -1 teaspoon paprika
    -1 teaspoon onion powder
    -Salt and pepper to taste
    -1 bell pepper (any color), cut into strips
    -1 small onion, cut into strips
    -2 medium zucchini, cut into rounds
    -2 tablespoons butter
    -2 tablespoons chopped fresh parsley (optional)

    Directions:
    1. Preheat your grill or grill pan over medium heat.
    2. While the grill is heating up, rub the pork chops with olive oil and season with garlic powder, paprika, onion powder, salt and pepper.
    3. Place the pork chops on the preheated grill and cook for about 4 minutes per side, or until cooked through. Set aside when done.
    4. In a large skillet melt butter over medium heat. Add bell pepper, onion and zucchini to the skillet and sauté for about 8 minutes until vegetables are tender. Season with salt and pepper to taste.
    5. Serve grilled pork chops with vegetables alongside or topped with the cooked vegetables. Sprinkle with chopped fresh parsley if desired. Enjoy!
