Enchiladas with Chicken and Cheese: A Stay At Home Parent’s Guide
As a stay at home parent, finding time to make delicious and nutritious meals for your family can be a daunting task. Fortunately, with a little bit of creativity and some basic ingredients, you can whip up a tasty dish in no time! Enchiladas with chicken and cheese is one such recipe that is perfect for busy parents and will be sure to please the entire family.
Ingredients:
-1 lb of cooked chicken, diced
-1 can of enchilada sauce
-1 cup of shredded cheese
-1 onion, chopped
-2 cloves of garlic, minced
-1 teaspoon of cumin
-3 tablespoons of olive oil
-8 tortillas
Instructions:
1. Preheat the oven to 350 degrees Fahrenheit.
2. Heat the olive oil in a large skillet over medium heat. Add in the onions, garlic and cumin and sauté until the onion is soft and fragrant.
3. Add in the diced chicken and cook until heated through.
4. Remove the skillet from the heat and add in half of the shredded cheese and mix to combine.
5. In a 9×13 inch baking dish spread 1/4 cup of enchilada sauce in an even layer on the bottom.
6. Take one tortilla at a time and fill it with about 1/4 cup of the chicken mixture, roll it up and place it in the baking dish seam side down. Repeat with remaining tortillas until all 8 are filled and placed in baking dish.
7. Pour remaining enchilada sauce over top of filled tortillas and top with remaining cheese.
8. Bake in preheated oven for 20 minutes or until cheese is melted and bubbly.
9. I then baked my enchiladas in a preheated 350 degree oven for 30 minutes or until they were golden brown on top. After taking them out of the oven, all that was left for me to do was plate them up for my family! When everyone gathered around our dinner table that night to enjoy these delicious enchiladas that I had made from scratch; it felt like such an accomplishment! Not only was it tasty but it was also special because it reminded us all that we don’t have to be stuck in a rut with our meal choices as stay-at-home parents!
