Beef Fajita Tacos – A Parent’s Quick and Delicious Dinner

Ingredients
1 pound of lean ground beef
1 onion, sliced into thin strips
3 bell peppers (any color), sliced into thin strips
2 cloves of garlic, minced
2 tablespoons chili powder
1 tablespoon ground cumin
1 teaspoon onion powder
1 teaspoon garlic powder
1/4 teaspoon salt
1/4 teaspoon black pepper
8-10 taco shells (hard or soft)
Optional: Shredded cheese, lettuce, salsa or sour cream for topping
Instructions1. Heat a large skillet over medium-high heat and add the ground beef. Use a wooden spoon to break up the beef as it cooks. Once the beef is cooked through, drain off any extra fat and remove from the skillet.
2. To the same skillet, add the onions and peppers. Cook until they become tender, about 5 minutes. Add the garlic and cook for an additional minute.
3. Return the cooked beef to the skillet with the vegetables and stir in the chili powder, cumin, onion powder, garlic powder, salt and pepper. Stir everything together until combined and cook for an additional 2-3 minutes until everything is heated through.
4. To assemble your tacos, place some of the beef-vegetable mixture in each taco shell then top with your desired toppings (shredded cheese, lettuce, salsa or sour cream). Serve warm and enjoy!

When I was growing up in Texas one of my favorite meals was beef fajita tacos from my mom’s kitchen. She would make them almost every week for us kids as a special treat! Now that I’m a parent myself I often make this same recipe for my own family – it’s a great way to get everyone involved in dinner time! 7. Heat up the tortillas in a separate skillet or in the microwave for 1 minute until warm and pliable.
8. To assemble, fill each tortilla with the steak and vegetable mixture and top with your desired toppings such as guacamole, sour cream, shredded cheese, salsa, etc., if desired.
