    Staying at Home with a Delicious Beef and Butternut Squash Stir-Fry

    As a stay at home parent, there is nothing more important than providing tasty meals to your family. With that in mind, I decided to cook up a beef and butternut squash stir-fry that turned out to be an absolute hit with the family! Not only was it delicious and packed with flavor, it also helped me bond with my kids as we worked together to prepare the meal.

    When I was a child, my mom used to make a beef and butternut squash stir-fry for a special treat. I remember how the aroma of the beef and vegetables cooking in the wok filled our home with warmth and comfort. As I grew older, I wanted to recreate my mother’s dish for my family.

    I started by gathering all of the necessary ingredients: 1 lb of lean beef steak, 1 small butternut squash (cubed), 1 small onion (diced), 1 red bell pepper (diced), 3 cloves of garlic (minced), 2 tablespoons of sesame oil, 3 tablespoons of soy sauce, 1 tablespoon of fresh ginger (grated), 2 tablespoons of honey, and some freshly chopped cilantro for garnish.

    Once all of the ingredients were prepped and ready to go, I heated some oil in my wok over high heat. Once the oil was hot, I added the steak and cooked it for about 5 minutes or until it was browned. Next, I added the onion, garlic, and bell pepper to the wok and cooked for about 2 minutes until they were softened. Then I added the cubed butternut squash to the wok and continued cooking for another 5 minutes or until it was tender.

    To finish off the dish, I added the sesame oil, soy sauce, ginger, and honey to the wok. I stirred everything together until combined and then let everything simmer together for another 5 minutes or so. Once everything was cooked through, I served up my beef and butternut squash stir-fry hot out of the wok topped with some freshly chopped cilantro as a garnish.

    My family absolutely loved this dish! Not only is it incredibly flavorful due to all of the spices used in it but also incredibly healthy due to all of the vegetables included in it. It’s definitely a meal that can be enjoyed by all ages which makes it perfect for families like mine who have kids ranging from toddlers to teens.

    Curry: A Spicy and Flavorful Recipe for Stay at Home Parents

    As a stay-at-home parent, one of the best ways to make sure that you’re providing a healthy and delicious meal for your family is to make your own dishes. Curry is a great choice because it’s packed with flavor, it’s easy to make, and it’s a great way to introduce your family to new flavors.     Ingredients:

    1 tablespoon olive oil
    2 cloves garlic, minced
    1 onion, chopped
    2 tablespoons curry powder
    1 teaspoon ground cumin
    1 teaspoon ground coriander
    1 teaspoon turmeric powder
    1 teaspoon garam masala
    1 can (14 ounces) coconut milk
    2 cups vegetable broth
    1 red bell pepper, diced
    1 cup frozen peas
    1 cup cooked chickpeas
    Salt and pepper, to taste
    Cilantro, for garnish (optional)

    Instructions:

    1. Heat the oil in a large pot over medium heat. Add the garlic and onion and cook until the onion is soft and translucent, about 5 minutes.

    2. Add the curry powder, cumin, coriander, turmeric, and garam masala. Cook for 1 minute until fragrant.

    3. Add the coconut milk and vegetable broth. Bring to a simmer and cook for 15 minutes.

    4. Add the bell pepper, peas, and chickpeas. Simmer for 10 minutes until the vegetables are tender.

    5. Season with salt and pepper to taste. Serve with cooked rice or naan bread and garnish with cilantro if desired. Enjoy!
