    When I was growing up, my mother would make tacos with beef, beans, and all of the traditional toppings. Every time we had tacos, it was like a family celebration! Add the taco seasoning mix and refried beans to the skillet and stir until everything is combined. Reduce heat to low and let simmer while you prepare the other ingredients.

    Next, assemble your tacos by filling each taco shell or tortilla with some of the beef mixture and topping it with lettuce, tomatoes, onion, cheese, sour cream, and salsa/hot sauce as desired. Serve immediately and enjoy!

Once the beef is cooked through, add in the garlic and cook for another minute. Add in the broccoli, carrots, soy sauce, honey, red pepper flakes, and salt and pepper. Stir everything together and cook for about 5 minutes or until the vegetables are tender.

    While the stir-fry is cooking, prepare the sweet and sour sauce by combining ¼ cup of honey, ¼ cup of white vinegar, 2 tablespoons of ketchup, and ½ teaspoon of red pepper flakes in a small bowl. Mix everything together until combined and set aside.

    Once the vegetables are cooked through, pour in the sweet and sour sauce and stir to combine. Cook for another 2 minutes or until everything is heated through. Serve over hot cooked rice or noodles if desired. Enjoy!

    The story behind this recipe is one of necessity. My husband and I had recently become parents when I realized that I just didn’t have the time or energy to make complicated meals. We both worked full time, and he was often on the road for weeks at a time. I needed something that was easy to make, that didn’t require a lot of ingredients, and that my daughter would love. That’s when I came up with this beef and eggplant casserole.

    Ingredients:
    1 lb ground beef
    1 large eggplant, diced
    1 onion, diced
    2 cloves garlic, minced
    1 can diced tomatoes (14 oz)
    1 cup beef broth

    2 tablespoons olive oil

    Directions:

    Pork Chops with Apple Cranberry Chutney

    Ingredients
    – 4 pork chops
    – 2 tablespoons olive oil
    – 2 tablespoons butter
    – 1 onion, chopped
    – 2 cloves garlic, minced
    – 2 tart apples, peeled and diced
    – 1/2 cup dried cranberries
    – 2 tablespoons brown sugar
    – 1 teaspoon ground ginger
    – 1/4 teaspoon ground allspice
    – Salt and pepper to taste
    – 1/4 cup apple cider vinegar

    As a stay at home parent, I am always looking for quick and easy dinner ideas that the whole family will enjoy. One of my go to recipes is Pork Chops with Apple Cranberry Chutney. It’s easy to make and only requires a few simple ingredients that you likely already have in your pantry. This delicious dish combines the sweetness of tart apples and dried cranberries with the savory flavor of pork chops for a flavor packed meal that everyone will love.

    To start, I heat up two tablespoons of olive oil in a large skillet over medium high heat. Once the oil is hot, I add the pork chops to the skillet and season them with salt and pepper. I then cook them for about five minutes on each side until they are golden brown and cooked through. Once they are done cooking, I remove them from the skillet and set them aside.

    Next, I melt two tablespoons of butter in the same skillet over medium heat. Once melted, I add the onions and garlic to the pan and sauté them until they are softened and lightly browned. Then I add in the apples, cranberries, brown sugar, ground ginger, ground allspice, salt and pepper. I cook this mixture for about five minutes until everything is combined and softened slightly. Once it’s finished cooking, I add in the apple cider vinegar to deglaze the pan and then remove it from heat.

    Finally, I return the pork chops back to the skillet with the chutney mixture and simmer everything together for about five minutes until everything is warmed through. Then it’s ready to serve! I like to serve this dish with some freshly cooked rice or mashed potatoes on the side for a complete meal.
