Shrimp and Tomato Soup Recipe
As a stay-at-home parent, I am always looking for new recipes to keep my family fed while keeping things interesting. So when I stumbled upon this recipe for Shrimp and Tomato Soup, I knew it was one that we had to try! Not only is it full of flavor, but it’s also fast and easy to make.
Ingredients:
-1 pound of peeled and deveined medium shrimp
-2 tablespoons of olive oil
-2 cloves of garlic, minced
-1 teaspoon of dried oregano
-1 teaspoon of ground cumin
-1 28 ounce can of diced tomatoes with juice
-2 cups of chicken broth
-1/4 cup of white wine (optional)
-Salt and pepper to taste
-Chopped fresh parsley for garnish (optional)Instructions:
1. Heat the olive oil in a large pot over medium heat. Add the garlic, oregano, and cumin and sauté for 1 minute.
2. Add the diced tomatoes and their juice to the pot and bring to a boil. Reduce heat to low and simmer for 10 minutes.
3. Add the chicken broth, white wine (if desired), and shrimp to the pot. Simmer until the shrimp are cooked through, about 5 minutes. Season with salt and pepper to taste.
4. Serve soup hot with a sprinkle of chopped parsley on top (optional). Enjoy!The story behind this dish is just as delicious as its flavors!
