    Shrimp and Rice Casserole: A Family-Friendly Meal for Busy Stay-at-Home Parents

    Add the shrimp, peas, oregano, basil, salt and pepper to the skillet. Stir gently until all of the ingredients are evenly combined. Transfer everything into an 8×8 baking dish or a 9×13 baking dish (depending on how many servings you need). Cover with aluminum foil and bake in preheated oven at 350°F for 25 minutes or until shrimp are cooked through and pinkish white in color. Serve warm with your favorite sides such as broccoli or roasted vegetables. Enjoy!

With work, school, after-school activities and more, it’s easy to let mealtime become just another chore on the long list of to dos. But staying home as a parent doesn’t have to mean boring meals or takeout. This beef and asparagus stir-fry is the perfect way to get creative in the kitchen while still keeping things simple.

    The beauty of stir-fries is that they can be as simple or complex as you want them to be. You can use whatever ingredients you have on hand or make a trip to the store for something special. For this beef and asparagus stir-fry, I like to use fresh ingredients for maximum flavor. I start by prepping the beef and marinating it in a mixture of soy sauce, oyster sauce, ginger, garlic, and sesame oil. This helps the meat to stay nice and tender during the stir-frying process.

    Once everything is prepped, it’s time to get cooking! I heat a wok or large skillet over high heat until it’s nice and hot. Then I add some oil (I prefer peanut oil) and let it heat until it begins to shimmer. Next I add my marinated beef and let it cook for about 3 minutes until it is nicely browned on both sides. Once everything is cooked through, I like to sprinkle some freshly chopped cilantro over the top for an extra burst of flavor!

    4. Add diced tomatoes and white wine then bring mixture to a boil before reducing heat to low and allowing flavors to meld together (about 5 minutes).
    5. Add raw shrimp then cook until shrimp are pink (about 4 minutes). Stir in butter then season with salt and pepper as desired before stirring in chopped parsley.
    6. Remove skillet from heat then stir in cooked grits until evenly combined throughout mixture (about 1 minute). Serve warm with extra butter if desired then enjoy!
