Grilled Chicken Salad: A Delicious and Nutritious Stay at Home Parent Recipe
As a stay at home parent, I know how hard it can be to come up with healthy and delicious meals for the whole family. That’s why I’m excited to share this recipe for grilled chicken salad. Ingredients List:
– 2 boneless, skinless chicken breasts
– Juice of 1 lime
– 2 tablespoons olive oil
– 2 cloves garlic, minced
– 1 teaspoon dried oregano
– Salt and pepper to taste
– 4 cups mixed greens
– 1 cup cherry tomatoes, halved
– ½ cup crumbled feta cheese
– ½ cup thinly sliced red onion
– 1 avocado, sliced
– Balsamic vinaigrette dressingInstructions:
1. Preheat your grill on medium heat. While it is heating up, combine the lime juice, olive oil, garlic, oregano, salt and pepper in a small bowl. Place the chicken breasts in the bowl and coat them with the marinade. Let them sit for 10 minutes.
2. Place the chicken on the preheated grill and cook for about 6 minutes on each side or until cooked through. Remove from the heat and let cool slightly before slicing into strips.
3. While the chicken is cooling, assemble your salad by combining the mixed greens, tomatoes, feta cheese, red onion and avocado in a large bowl. Drizzle with balsamic vinaigrette dressing and toss to combine. Divide among plates or bowls.
4. Top each salad with grilled chicken strips, season with additional salt and pepper if desired and serve immediately. • 1 teaspoon onion powder
• 1 teaspoon ground cumin
• 1 teaspoon smoked paprika
• 1 teaspoon chili powder

Once it’s shredded, return it to the cooking liquid in the roasting pan and stir everything together until the pork is evenly coated with all of those delicious flavors. Then all you have to do is serve!
