    Miso Soup – A Delicious and Nutritious Meal for Stay-at-Home Parents

    As a stay-at-home parent, it can be difficult to find the time to cook healthy and delicious meals for your family. One of my favorite dishes to make is miso soup. It’s easy to make, full of flavor, and is packed with essential nutrients. Plus, it only takes about 20 minutes from start to finish.

    Ingredients:
    1 liter of dashi (fish or seaweed stock)
    4 tablespoons of miso paste (I prefer white miso)
    2 tablespoons of mirin
    2 tablespoons of soy sauce
    1/2 cup of wakame seaweed
    1/2 cup of tofu, cut into small cubes
    1/4 cup of diced green onions
    Optional: 1/4 cup of diced carrots or mushrooms

    Instructions:
    1. Begin by heating the dashi in a pot on medium heat.
    2. Once the dashi is hot, reduce the heat and add the miso paste, stirring until it’s fully dissolved.
    3. Add the mirin, soy sauce and wakame seaweed. Simmer for about 5 minutes.
    4. Add the tofu and vegetables (carrots or mushrooms if desired). Simmer for about 5 minutes more until vegetables are cooked through.
    5. Taste and adjust seasoning if necessary. Serve warm in individual bowls with a sprinkle of green onions on top. Enjoy!

    Ingredients:
    1 lb ground beef
    1 cup breadcrumbs
    1 egg
    1/2 cup diced onions
    1/4 cup ketchup
    1 teaspoon Worcestershire sauce
    1 teaspoon garlic powder
    1 teaspoon Italian seasoning Salt and pepper to taste
    Instructions:
    1. Preheat oven to 375 degrees Fahrenheit.
    2. In a large bowl, combine the ground beef, breadcrumbs, egg, onions, ketchup, Worcestershire sauce, garlic powder, Italian seasoning, salt and pepper until well blended.
    3. Place the mixture into a 9×5 inch loaf pan and spread evenly in the pan.
    4. Bake for 40 minutes or until the internal temperature of the meatloaf reaches 160 degrees Fahrenheit.
    5. Let cool for 10 minutes before slicing and serving.
