    I’ve been making this dish for years, ever since I was a child. My parents used to make it for us all the time – it was a favorite in our house. My mom would always tell me the story of how she came up with the recipe when she moved to America from China as a young adult.     Instructions:
    1. Heat a large skillet over medium-high heat. Add the ground beef and cook until browned and cooked through, about 8 minutes. Break up any large pieces with a wooden spoon or spatula as it cooks.
    2. Add the diced bell peppers, onion, garlic, soy sauce, sesame oil and salt and pepper to taste. Cook for an additional 5 minutes or until vegetables are softened.
    3. Add the black beans and cook for an additional minute or two until heated through. Serve over cooked rice if desired. Enjoy!

Plus, it’s healthy – packed with protein from the beef and fiber from the black beans – so you can feel good about serving it to your family.
