2. Add the cooked rice and vegetables to the skillet and cook for another 5 minutes until everything is heated through.
3. Push the vegetables and rice aside, making a small well in the pan. Crack the eggs into the well, season with salt and pepper, and scramble them until cooked through.
4. Once the eggs are cooked, mix them together with the vegetables and rice.
5. Finally, add soy sauce to taste and cook for another minute or two until everything is combined and heated through.

Falafel – A Tasty Middle Eastern Treat for the Whole Family
If you’re looking for a tasty, healthy and filling meal that is sure to please the whole family, look no further than falafel. Ingredients:
1 cup dried chickpeas (or 1 can chickpeas)
1 small onion
2 cloves garlic
2 tsp cumin
2 tsp coriander
1 tsp baking powder
Salt & pepper to taste
Vegetable oil for frying
Pita breads & toppings to serve (optional)Instructions:
1. If using dried chickpeas, start by soaking them overnight in plenty of cold water. Drain and rinse well before using.
2. Add the chickpeas to a food processor along with the onion, garlic, cumin, coriander and baking powder. Pulse until everything is combined but still slightly chunky (you don’t want it too smooth).
3. Season with salt and pepper then shape into small balls or patties (depending on your preference).
4. Heat the vegetable oil in a large saucepan over medium heat until hot but not smoking. Fry the falafel in batches until golden brown on both sides (about 2-3 minutes per side).
5. Serve hot with pita breads and your choice of toppings such as hummus, tahini or vegetables. Enjoy!
