“Casserole Craze: Beef and Broccoli Dish Will Keep You Cozy at Home!”
Beef and Broccoli Casserole – A Nutritious Meal for the Busy Stay-at-Home Parent
As a stay-at-home parent, finding the time to make delicious and nutritious meals for your family can be a challenge. One solution to this problem is to make casseroles, which are quick and easy to prepare and can often provide multiple meals. One of my favorites is beef and broccoli casserole. This hearty dish is full of protein, vegetables, and flavor, and it can easily be adapted to fit your family’s tastes.
Ingredients:
• 2 pounds lean ground beef
• 2 cups frozen broccoli florets
• 1 onion, diced
• 1 green bell pepper, diced
• 1 teaspoon garlic powder
• 2 tablespoons Worcestershire sauce
• 1 can (10¾ ounces) condensed cream of mushroom soup
• 1 cup shredded Cheddar cheese
• 1 cup dry bread crumbs or crushed crackers
• 2 tablespoons butter, meltedInstructions:
1. Preheat oven to 350°F. Lightly grease a 9×13 inch baking dish with cooking spray.
2. In a large skillet over medium heat, cook the ground beef until no longer pink. Drain off any fat from the pan.
3. Add the broccoli, onion, bell pepper and garlic powder and cook until the vegetables are tender. Stir in the Worcestershire sauce.
4. In a medium bowl, mix together the cream of mushroom soup with ¼ cup of water until smooth; add this to the skillet along with the cooked beef and vegetables. Mix everything together then spread into the prepared baking dish.
5. In a small bowl combine together the cheese, bread crumbs or crackers and melted butter; sprinkle this mixture over the top of the casserole.
6. Bake in preheated oven for 30 minutes or until golden on top and bubbly around the edges. Let stand for 5 minutes before serving so that it sets up better when cut into squares for serving.I love this recipe because it has all of my favorite ingredients in one dish – ground beef for protein, frozen broccoli for essential vitamins and minerals, bell pepper for flavor, and cheese for a delicious topping! Plus, it’s a great way to get kids involved in meal preparation since they can help mix everything together and then sprinkle on the topping before baking it off in the oven! And since you can make several meals out of one pan of casserole, you’ll have plenty of leftovers that you can use to make easy lunches during your busy weekdays as a stay-at-home parent!

Beef and Green Bean Stir-Fry: An Easy Recipe for Stay-at-Home Parents
As a stay-at-home parent, I know how hard it can be to make a delicious and healthy dinner for the family on a busy night. That’s why I love this dish, beef and green bean stir-fry. It’s a one-pot meal that’s full of flavor, easy to make, and ready in minutes. Plus, your kids will love it!
This dish is based on a classic Chinese recipe, but I’ve added a few of my own twists. The results are a savory dish that’s sure to please picky eaters. To make it even better, I like to use grass-fed beef and organic green beans. But you can use whatever ingredients you have on hand. Let’s get started!
Ingredients:
1 pound of grass-fed beef (such as sirloin or chuck roast)
2 tablespoons of olive oil
1 large onion
1 red bell pepper
2 cloves of garlic
1 teaspoon of freshly grated ginger
1 teaspoon of sesame oil
2 tablespoons of soy sauce
2 teaspoons of brown sugar
1/4 teaspoon of red pepper flakes (optional)
2 cups of fresh green beans
Salt and pepper to tasteDirections:
1. Heat the olive oil in a large skillet over medium heat. Add the beef and cook for about 5 minutes until the meat is browned on the outside but still slightly pink inside. Remove the beef from the skillet and set aside.
2. Add the onion, bell pepper, garlic and ginger to the skillet and cook until softened, about 3 minutes. Then add the sesame oil, soy sauce, brown sugar and red pepper flakes (if using). Stir everything together until combined.
3. Add the cooked beef back into the pan along with the green beans. Cook everything together for about 5 minutes until the beans are tender but still crisp.
4. Season with salt and pepper to taste then serve warm with cooked rice or noodles. Enjoy!

As I was prepping this dish one evening after a long day with my kids, I couldn’t help but think back to my childhood days in China when my mom would make this exact same dish for us every week night.
