Cook Up Delicious Osso Buco for Stay-At-Home Parents – No Trip to the Grocery Store Needed!
Osso buco is one of the most classic Italian dishes. It’s a rich, braised veal shank that is slow cooked in a tomato-based sauce and served with vegetables. It’s a delicious and hearty meal that is perfect for feeding the whole family.

Ingredients:
• 4 large veal shanks
• 2 tablespoons olive oil
• 2 onions, diced
• 4 cloves garlic, minced
• 1 teaspoon dried oregano
• 2 tablespoons tomato paste
• 1 cup dry white wine
• 2 cups chicken broth
• 1 bay leaf
• 2 carrots, peeled and diced
• 2 stalks celery, diced
• ½ cup frozen peas
• Salt and pepper to tasteInstructions:
1. Preheat oven to 350°F (175°C).
2. Heat olive oil in a large Dutch oven over medium heat. Add the veal shanks, season with salt and pepper, and cook until golden brown on all sides, 6-8 minutes per side. Remove from the pan and set aside.
3. Add the onions and garlic to the pan and cook until softened, about 5 minutes. Stir in oregano and tomato paste until combined.
4. Pour in wine and chicken broth and bring to a boil. Add bay leaf and reduce heat to low; simmer for 10 minutes.
5. Return veal shanks to the pot along with carrots, celery, peas, salt and pepper; stir to combine ingredients. Cover with lid or aluminum foil and place into preheated oven; bake for 1½ hours or until veal is tender.
6. Serve hot over creamy mashed potatoes or polenta with fresh parsley as garnish (optional). Beef Lasagna: A Story of Comfort and Love
For me, nothing says comfort like a delicious lasagna. It brings back memories of my grandmother’s Sunday dinners and of the warmth I felt when eating her homemade lasagna. Now, as a stay-at-home parent, I have the opportunity to recreate that feeling for my family by making my own beef lasagna. This is not just a meal—it is an experience, one that envelops us in the warmth of home and brings us together as a family.
Ingredients:
1 lb ground beef
1 onion, diced
3 cloves garlic, minced
1 (24 oz) jar marinara sauce
2 (8 oz) cans tomato sauce
2 teaspoons Italian seasoning
3 cups ricotta cheese
1/4 cup freshly grated parmesan cheese
1/4 cup chopped fresh parsley leaves
2 large eggs, lightly beaten
1/2 teaspoon freshly ground black pepper
1/4 teaspoon salt
12 lasagna noodles
4 cups shredded mozzarella cheeseDirections:
Preheat oven to 375 degrees F (190 degrees C). Grease a 9×13 inch baking dish.
In a large skillet over medium heat, cook beef, onion and garlic until beef is browned and onion is tender. Drain fat. Stir in marinara sauce and tomato sauce; season with Italian seasoning. Simmer on low heat for 10 minutes.
In a medium bowl combine ricotta cheese, parmesan cheese, parsley, eggs, black pepper and salt; mix well.
Spread 1 cup of meat sauce in the bottom of the prepared baking dish. Arrange 4 uncooked lasagna noodles over the sauce. Spread 1/2 of ricotta cheese mixture over noodles; top with 1 cup meat sauce and 1 cup mozzarella cheese. Repeat layers twice more. Cover with aluminum foil.
Bake in preheated oven for 40 minutes; remove foil and bake an additional 15 minutes or until top is lightly browned and bubbly around edges. Let stand 10 minutes before serving. Enjoy!

Shepherd’s Pie – A Hearty and Delicious Dinner for Busy Stay at Home Parents
As a stay at home parent, you know how important it is to make sure that your family is eating healthy and delicious meals. One of the most comforting dinner dishes for busy parents is Shepherd’s Pie. This traditional dish is easy to make, nutritious, and can easily be adapted to what your family likes.
Shepherd’s Pie is a classic comfort food that has been around since the 18th century. In its simplest form, it consists of a mixture of ground beef or lamb, vegetables, aromatics, and a potato topping. The combination of flavors makes it a hearty meal that can easily feed a family of four.
My grandmother used to make the most delicious Shepherd’s Pie every Sunday dinner. She would use her own recipe which included ground beef, carrots, celery, onions, and garlic cooked in a rich tomato sauce. Topped with a layer of mashed potatoes, she would bake it in the oven until the top was golden brown and bubbly. -1 lb ground turkey
-2 carrots peeled and finely chopped
-2 stalks celery finely chopped
-1 onion finely chopped
-2 cloves garlic minced
-1 can diced tomatoes
-1 tsp dried oregano
-1 tsp dried basil
-1/2 cup frozen peas
-1/2 cup frozen corn kernels
-Salt and pepper to taste
For the mashed potatoes:
-6 medium potatoes peeled and cubed
-3 Tbsp butter
-3 Tbsp milkInstructions:
1. Preheat oven to 350°F (175°C). In a large skillet over medium heat add in the ground turkey and cook until no longer pink breaking up as you go along. Add in carrots, celery, onion garlic, tomatoes, oregano, basil, salt & pepper. Stir well until everything is combined and cook for about 10 minutes or until vegetables have softened. Add in frozen peas & corn then stir to combine everything together. Remove from heat then set aside.
2. In a large pot add potatoes then cover with cold water by 1 inch (2 cm). Bring to a boil then reduce heat to medium low and simmer for about 15 minutes or until potatoes are tender when pierced with fork. Drain potatoes then return to pot then mash using potato masher until desired consistency is reached adding in butter & milk as you go along until creamy & smooth.
3. Assemble Shepherd’s Pie by transferring turkey mixture into 9×13 inch (23×33 cm) baking dish then spread mashed potatoes evenly over top using back side of spoon creating peaks & valleys for nice presentation if desired then season lightly with salt & pepper if needed. Bake in preheated oven for about 40 minutes or until top is golden brown & bubbly throughout then remove from oven & let cool for 10 minutes before serving warm with your favorite sides such as green salad or roasted vegetables if desired then enjoy!
Making Shepherd’s Pie once again brings me back to those Sunday dinners with my grandmother who taught me how important it was to serve up delicious meals that were full of love and nourishment no matter how busy life got around us. This classic dish will always have a place on our dinner table today as much as it did back when I was growing up!
