    – 4 cups chicken broth or stock

    2. Add rice to the pot and stir to combine with vegetables and sausage. Pour in chicken broth or stock along with thyme, cayenne pepper and bay leaf; bring to a boil. Reduce heat to low; cover pot and simmer until rice is tender and liquid is absorbed (about 20 minutes).
    3. Add shrimp and chicken; stir gently until heated through (about 5 minutes). Discard bay leaf before serving. Garnish with parsley if desired before serving hot. Enjoy!

    As a stay-at-home parent, I know how hard it can be to put together a delicious, nutritious meal for the family. Today, I’m going to share one of my favorite recipes that can be prepared in under an hour and makes a great weeknight meal. It’s my delicious Chicken and Shrimp with Vegetable Fried Rice.

    This recipe is simple to prepare and full of flavor. The combination of chicken and shrimp provides a good source of protein while the vegetables provide essential vitamins and minerals. The fried rice is made with jasmine rice which has a light, fluffy texture when cooked. The addition of garlic, ginger, and soy sauce add depth of flavor and make this dish truly memorable.

    Ingredients:

    • 2 tablespoons vegetable oil

    • 1 pound boneless, skinless chicken breasts, diced into bite-size pieces
    • 1 pound medium shrimp, peeled and deveined
    • 2 cloves garlic, minced
    • ½ teaspoon ground ginger
    • 2 cups jasminerice
    • 4 cups vegetable broth
    • 1 red bell pepper, diced
    • ½ cup frozen peas
    • 2 tablespoons low sodium soy sauce
    • 1 tablespoon sesame oil
    • Salt & pepper to taste

    Instructions:

    1. Heat a large skillet or wok over medium-high heat. Add the vegetable oil and the chicken pieces; cook for 5 minutes or until lightly browned on the outside.
    2. Add the shrimp and continue cooking for an additional 5 minutes or until the shrimp are cooked through. Remove from pan and set aside.
    3. Reduce heat to medium-low; add garlic and ginger to pan and cook for 1 minute until fragrant.
    4. Add the jasmine rice to the pan; stirring constantly until lightly toasted (about 3 minutes).
    5. Pour in the vegetable broth; stir to combine with the rice then cover with a lid. Simmer for 20 minutes or until liquid is absorbed by the rice.
    6. Once cooked, add red bell pepper, peas, soy sauce, sesame oil and cooked chicken and shrimp; stir to combine all ingredients then season with salt & pepper if desired. Cook for an additional 2-3 minutes or until everything is heated through before serving hot.

    This Chicken and Shrimp with Vegetable Fried Rice is a great way to get dinner on the table quickly while also having something that’s nutritious AND delicious! My kids love it too – they always ask me to tell them the story about how I came up with this recipe while we’re eating it! So here it goes…I was trying to make something special for my family one day but I was running low on time so I had to make something quick but still tasty enough that everyone would enjoy it! After rummaging through my pantry I found some frozen shrimp that needed to be used up so I decided to combine it with some diced chicken breast along with a few vegetables like bell peppers and peas plus some fragrant garlic, ginger and sesame oil which were all sautéed together in a large skillet before adding some jasmine rice which was cooked in vegetable broth on the side! And that’s how this delicious Chicken and Shrimp with Vegetable Fried Rice was born! Now my family loves it whenever I make it – even my picky eaters can’t get enough!     1/2 cup of water
    8-10 soft taco shells
    Shredded lettuce
    Shredded cheese of your choice
    Any additional toppings you’d like (salsa, sour cream, jalapenos, etc.)

    Instructions:
    1. Heat a large skillet over medium-high heat. Add the ground beef and cook until it is no longer pink. Drain off any excess fat.
    2. Stir in the taco seasoning mix and water. Bring to a boil and reduce to a simmer. Cook for 5-7 minutes or until the mixture has thickened.
    3. Heat the taco shells according to package directions.

    Beef Fajitas

    Ingredients:

    -1 lb. of top sirloin steak
    -2 bell peppers (red, yellow or green)
    -1 red onion
    -3 tablespoons of olive oil
    -1 teaspoon of garlic powder
    -1 teaspoon of chili powder
    -1 teaspoon of cumin
    -Salt and pepper to taste
    -8 flour tortillas
    -Toppings: guacamole, sour cream, shredded cheese, salsa, etc. (optional)

    Instructions:

    1. Slice the steak into thin strips and place in a bowl.
    2. Add the garlic powder, chili powder, cumin, salt and pepper and mix until everything is well combined. Set aside.
    3. Slice the bell peppers and red onion into thin strips.
    4. Heat the olive oil in a large skillet over medium heat. Add the steak strips and cook for 4-5 minutes until cooked through. Remove from skillet and set aside.
    5. Add the bell peppers and onion to the skillet and cook for 3-4 minutes until softened.
    6. Return the steak to the skillet and mix everything together. Cook for a few minutes until everything is heated through.
    7. Heat up the tortillas in a separate skillet or in the microwave for 1 minute until warm and pliable.
    8. To assemble, fill each tortilla with the steak and vegetable mixture and top with your desired toppings such as guacamole, sour cream, shredded cheese, salsa, etc., if desired. Enjoy!

    As a stay at home parent I’m always looking for quick and easy recipes that my family will love! One of our favorite meals is beef fajitas – they are packed with flavor but don’t take too long to make! The best part is that everyone can customize their own fajita with their favorite toppings which makes it fun for everyone at dinner time!

    The key to making flavorful beef fajitas is marinating the steak before cooking it – this helps add some amazing flavor to the fajitas! I like to marinate my steak overnight but if you’re short on time you can marinate for at least an hour before cooking it – either way it will be delicious! Once you’ve marinated your steak it’s time to start cooking – I like to cook my vegetables first so that they have time to soften up before adding in my steak strips – this helps the flavors really meld together! Once everything is cooked it’s time to assemble your fajitas – I like to use flour tortillas but you can use whatever type of tortilla you prefer! Just fill each tortilla with your steak and veggies mixture then top them off with your favorite toppings like guacamole, sour cream, cheese or salsa (or all of them!)

    My family loves having beef fajitas because they are always full of flavor but don’t take too much time to make! It’s also great because everyone can customize their own fajita so everyone is happy come dinner time which makes my job as a stay at home parent much easier!     As a stay at home parent, I often find myself in the kitchen at some point in the day. Whether it’s making a quick breakfast before the kids get up, or preparing dinner after the little ones have gone to bed, I am always looking for new dishes to make for my family. This is why I love paella. Not only is it a delicious one-pot meal that everyone in my family loves, but it is also incredibly easy to make.

    When I first tried paella, I was surprised by how much flavor was packed into this simple dish. It’s made with saffron-infused rice, vegetables, shrimp, and chicken and cooked together in a flavorful broth. The combination of ingredients makes a delicious and filling meal that can easily feed an entire family.     3 cups chicken broth
    1 red bell pepper, diced
    1/2 cup peas
    1/2 pound cooked shrimp
    1/2 pound cooked chicken
    Salt & pepper to taste

    Instructions:

    1. Heat olive oil in a large skillet over medium heat. Add onion and garlic and sauté until soft and fragrant, about 3 minutes. Add rice, paprika, and saffron threads and cook until all grains are coated in oil, about 2 minutes more.

    2. Pour in chicken broth and bring to a boil over high heat. Once boiling, reduce heat to low and simmer for 15 minutes until rice is tender and liquid has been absorbed.

    3. Add bell pepper, peas, shrimp and chicken pieces; season with salt & pepper to taste; stir well then cover skillet with lid or foil paper; continue cooking over low heat for an additional 10 minutes or until vegetables are tender but not mushy.

    4. Serve paella hot with your favorite side dishes such as salad or crusty bread; enjoy!
