    Sushi Rolls: A Delicious and Healthy Stay at Home Parent Recipe

    As a stay at home parent, finding the time and energy to make delicious, healthy meals for your family can be a challenge. One of my go-to recipes is homemade sushi rolls. Not only are they delicious and healthy, but they’re also fun to make! Here’s what you’ll need:

    Ingredients:

    – 2 cups of cooked sushi rice (plus 1 teaspoon of rice vinegar)

    – 4 sheets of nori seaweed
    – 1 avocado
    – 1 cucumber
    – 4 ounces of smoked salmon
    – 2 tablespoons of mayonnaise
    – 2 tablespoons of sesame seeds
    – Soy sauce for dipping (optional)

    Instructions:
    1. Start by preparing the sushi rice according to the package directions. When it is finished cooking, stir in 1 teaspoon of rice vinegar and set aside.
    2. Cut the avocado, cucumber, and smoked salmon into thin strips.
    3. Place one sheet of nori seaweed on a bamboo rolling mat. Spread ¼ cup of cooked sushi rice onto the nori sheet with a spoon or rubber spatula.
    4. Place the avocado, cucumber, and smoked salmon strips in a line down the center of the sushi roll.
    5. Spread a thin layer of mayonnaise over the top of the ingredients in the center of the roll.
    6. Sprinkle sesame seeds over the top.
    7. Roll the sushi up by starting at one end and rolling it tightly with your fingers or with the help of the bamboo mat until it forms a cylinder shape. Be sure to keep it tight so that all of your ingredients stay inside!
    8. Slice each roll into 8 pieces with a sharp knife dipped in cold water.

    You can enjoy your homemade sushi rolls as is or dip them in soy sauce for extra flavor! The best part about making sushi rolls at home is that you can customize them however you like – add more vegetables or switch out ingredients for whatever you have on hand!     2. Lay a sheet of nori on a bamboo rolling mat. Spread 1/4 cup of the prepared sushi rice over the nori, leaving about an inch of space at one end. Layer desired fillings (imitation crabmeat, avocado, cucumber) over the rice in an even layer.
    3. Starting from the end closest to you, use your fingers to roll up the bamboo mat tightly so that all of the ingredients are wrapped inside of the nori sheet. Gently squeeze as you roll so that all of your ingredients stay in place inside your roll.
    4. Once your roll is finished, use a sharp knife to cut it into 8 pieces. Serve with prepared sushi ginger, wasabi paste, and low sodium soy sauce for dipping!
