Shrimp and Vegetable Soup: A Delicious, Hearty and Healthy Option for Stay at Home Parents
As a stay at home parent, it can be difficult to find the time and energy to cook a healthy and hearty meal. But with this delicious recipe for shrimp and vegetable soup, you can provide your family with a nutritious and flavorful meal that’s sure to please everyone. Ingredients:
-2 tablespoons olive oil
-1 medium onion, diced
-2 cloves garlic, minced
-2 carrots, peeled and diced
-2 stalks celery, diced
-1 (14.5 ounce) can diced tomatoes
-4 cups vegetable broth
-1 teaspoon dried oregano
-1 teaspoon dried basil
-1/4 teaspoon red pepper flakes
-1/2 teaspoon kosher salt
-1/4 teaspoon black pepper
-1 cup frozen green beans
-1 cup frozen corn kernels
-1 pound large shrimp, peeled and deveined
-Fresh parsley, for garnish (optional)Instructions:
1. Heat olive oil in a large pot over medium heat. Add the onion and garlic and sauté until softened, about 5 minutes. Add the carrots and celery and sauté for an additional 5 minutes.
2. Add the diced tomatoes, vegetable broth, oregano, basil, red pepper flakes, salt, pepper, green beans and corn kernels. Bring to a boil then reduce heat to low. Simmer for 10 minutes or until vegetables are tender.
3. Add the shrimp to the pot and simmer for an additional 5 minutes or until shrimp is cooked through. Taste the soup and adjust seasonings as desired.
4. Serve hot with fresh parsley as garnish (optional). Enjoy!
