Grill Up a Delicious Shrimp & Veggie Kabob Tonight – Perfect for Busy Stay-at-Home Parents!
Shrimp and Vegetable Kabobs – A Delicious and Healthy Stay at Home Parent Recipe
When it comes to feeding your family as a stay at home parent, it can be hard to find recipes that are both healthy and delicious. One of my favorite recipes is shrimp and vegetable kabobs, which is not only healthy, but also easy to make and fun to eat. Here’s the recipe, along with a story about why this recipe is so special to me.
Ingredients:
-1 lb large shrimp, peeled and deveined
-2 bell peppers, cut into 1-2 inch pieces
-1 large red onion, cut into 1-2 inch pieces
-2 zucchini, cut into 1-2 inch slices
-1/4 cup olive oil
-3 cloves garlic, minced
-1 teaspoon smoked paprika
-1 teaspoon oregano
-1/2 teaspoon salt
-1/4 teaspoon freshly ground black pepper
-Metal or wooden skewers (if using wooden skewers, soak in water for 30 minutes before using)Instructions:
1. Preheat the grill or oven to 400°F.
2. In a large bowl, combine the shrimp, bell peppers, red onion, zucchini, olive oil, garlic, smoked paprika, oregano, salt, and pepper. Toss until everything is evenly coated.
3. Thread the shrimp and vegetables onto skewers. Make sure not to overcrowd the skewers. You may need to use multiple skewers for each kabob.
4. Grill the kabobs for 10 minutes or until the shrimp are cooked through and the vegetables are tender. If you’re using an oven instead of a grill, bake the kabobs on a greased baking sheet for 12 minutes or until cooked through.
5. Serve the kabobs with your favorite sides or as is. Enjoy! This recipe has been in my family for generations and it’s one of my favorite recipes to make as a stay at home parent because it’s easy to make and always delicious. The story behind this recipe is that my great grandmother used to make it for her family every Sunday night when I was growing up. Everyone in my family would gather around the table for dinner and enjoy these delicious kabobs together – it was always so special! Now that I’m a stay at home parent myself and I have my own family to feed each night, I still love making this recipe because it reminds me of eating with my great grandmother all those years ago. Plus, my kids love it too! It’s always a hit with everyone who eats it! So if you’re looking for an easy but delicious recipe that everyone in your family will love – give this one a try!
