    Pad Thai Recipe: A Guide for Stay-at-Home Parents

    As stay-at-home parents, we all need a little break from the monotony of packing lunch boxes and getting kids off to school. But, when you don’t have time to go out for dinner, it can be tricky to find a meal that’s both delicious and easy to make. That’s why I’m so excited to share this classic Pad Thai recipe with you! This dish is one of my family’s favorites, and I think it’ll be a hit with your kids too. With just a few simple ingredients and a bit of time, you can whip up this tasty dish that’s sure to please everyone in your family.

    I first discovered Pad Thai when my husband took me out for dinner at an authentic Thai restaurant. I was immediately hooked on the flavors – the sweet and sour sauce, the nutty crunch of peanuts, and the chewy rice noodles. After that meal, I was determined to recreate this delicious dish at home. After some trial and error, I finally perfected my own version of Pad Thai. It’s quick and easy to make, but still full of flavor. And since we all love it so much, I make it at least once a week in our house!

    Ingredients:

    • 8 ounces dried rice noodles

    • 2 tablespoons vegetable oil
    • 2 cloves garlic, minced
    • 1/2 cup chopped onion
    • 1 cup bean sprouts
    • 2 eggs, beaten
    • 1/4 cup fish sauce
    • 2 tablespoons brown sugar
    • 2 tablespoons lime juice
    • 1/4 cup chopped peanuts
    • 2 tablespoons chopped fresh cilantro

    Instructions:

    1. Begin by soaking the rice noodles in warm water for 15 minutes until softened. Drain them and set aside.

    2. Heat the oil in a large skillet over medium heat. Add the garlic and onion, cooking until fragrant and slightly golden brown.

    3. Add the bean sprouts and eggs to the pan, stirring until the eggs are cooked through.
    4. Add the soaked noodles and stir until combined with the vegetables and eggs.

    5. In a small bowl, combine fish sauce, brown sugar, lime juice and mix until combined. Pour this mixture over the noodles in the skillet and stir until everything is well combined.

    6. Finally add peanuts and cilantro to the skillet stirring until combined then remove from heat. Serve warm with extra lime wedges if desired!

    Making Pad Thai at home has been such an amazing way for us stay-at-home parents to get creative in the kitchen while also spending quality time with our kids! It’s definitely something that my family looks forward to making together each week – my four year old loves helping me measure out all of the ingredients while my seven year old enjoys stirring everything together in the skillet! It certainly makes for a fun afternoon activity that is also nutritious – win-win! And not only does it fill our bellies but it also fills our hearts as well!

    Ingredients:

    – 2 tablespoons vegetable oil
    – 2 cloves of garlic, minced
    – 1 teaspoon freshly grated ginger

    – 2 tablespoons soy sauce
    – Salt and pepper to taste

    Directions:

    1. Heat the oil in a large skillet over medium heat. Add the garlic and ginger and cook until fragrant, about 1 minute.

    2. Add the shrimp to the skillet and cook until just pink, about 3 minutes. Remove from the pan and set aside.

    3. Add the asparagus to the pan and cook for 3 minutes or until tender-crisp. Return the shrimp to the pan along with the soy sauce and stir to combine.

    4. Cook for an additional 2 minutes or until everything is heated through. Season with salt and pepper to taste. Serve warm over rice or noodles if desired.

    As I prepared this recipe for my family one night recently, I was reminded of my own childhood growing up in Japan where stir-fries were a staple in our home. Every night my mother would make some variation of this dish using whatever ingredients she had on hand at the time – chicken, pork, seafood – it was always delicious! This shrimp and asparagus stir-fry takes me back to those comforting memories every time I make it for my family now.

    Pho: An Easy and Delicious Recipe to Try at Home

    As a stay-at-home parent, it can be challenging to find time to create a delicious and nutritious meal for the family. That’s why I am so excited to share with you all this easy and delicious Pho recipe that is sure to become a family favorite. Not only is it simple to prepare, but it is also incredibly flavorful, healthy, and is just the perfect meal for a cozy night in with the family.

    Ingredients:
    • 8 cups of chicken or vegetable broth
    • 1 onion, sliced
    • 2 cloves of garlic, minced
    • 1 teaspoon of fresh ginger, grated
    • 2 tablespoons of fish sauce
    • 1 tablespoon of brown sugar
    • 1 teaspoon of ground coriander
    • 1 teaspoon of ground cinnamon
    • 2 tablespoons of vegetable oil
    • ½ pound of rice noodles
    • 2 cups of julienned carrots
    • 2 cups of bean sprouts
    • 2 cups of thinly sliced mushrooms
    • 2 limes, cut into wedges
    • Fresh cilantro leaves, chopped
    • Fresh basil leaves, chopped
    • 1 jalapeño pepper, sliced
    • Sriracha sauce (optional)

    Instructions:

    1. Heat the vegetable oil in a large pot over medium-high heat. Add the onion and garlic and sauté until fragrant, about 2 minutes.

    2. Add the ginger, coriander and cinnamon and sauté for another minute. Then add the chicken or vegetable broth and bring to a boil. Reduce the heat and simmer for 10 minutes.

    3. Add the fish sauce and brown sugar to the pot and stir until combined. Then add the rice noodles and cook for 5 minutes or until softened.

    4. Divide the noodles between 4 bowls and top each bowl with carrots, bean sprouts, mushrooms, cilantro leaves, basil leaves, jalapeño pepper slices and lime wedges. Ladle the hot broth over each bowl and serve immediately with sriracha sauce on the side (optional). Enjoy!

    I was first introduced to Pho when my family immigrated from Vietnam to Canada when I was 8 years old. My mom would make us this delicious soup every Sunday night after church as a special treat for us kids. We would eagerly await her arrival home from church so we could gather around the dinner table to enjoy her famous Pho recipe! Even though we may not be able to gather around our dinner table as often as we used to due to our hectic schedules these days, I still enjoy making this easy Pho recipe as a way to reconnect with my roots while creating lasting memories around our dinner table that my kids will cherish for years to come.
