    Sushi Recipe for the Stay-at-Home Parent

    For parents who are stuck at home with their kids, it can be hard to come up with new and exciting recipes. But sushi is a great meal that can be made with ingredients you likely have on hand. Here’s a simple sushi recipe that’s perfect for the stay-at-home parent.

    Ingredients:

    2 cups of sushi rice

    2 tablespoons of rice vinegar

    1 teaspoon of sugar

    1 tablespoon of salt

    4 sheets of nori seaweed

    4 ounces of smoked salmon, thinly sliced
    4 ounces of imitation crabmeat, shredded
    1 avocado, thinly sliced
    Soy sauce for dipping

    Instructions:

    1. Begin by preparing the sushi rice. Rinse the rice in a strainer until the water runs clear. Then place the rice in a pot with 2 cups of water and bring to a boil. Lower the heat and simmer for 15 minutes, or until all the water is absorbed.

    2. Once the rice is finished cooking, transfer it to a large bowl and let it cool. In a small bowl, mix together the vinegar, sugar, and salt until combined. Pour this mixture over the cooled rice and use a wooden spoon or spatula to mix everything together until evenly coated.

    3. Now you’re ready to start making your sushi rolls! Place one sheet of nori on a cutting board or clean surface and spread a layer of cooled sushi rice over it, leaving an inch around each edge without any rice. Place your toppings—in this case smoked salmon, imitation crabmeat, and avocado slices—in straight lines across the middle of the sheet.

    4. Start rolling from one end to the other until you have rolled up your sheet with all its tasty toppings inside! To make sure your roll stays together use your fingers to press down lightly along each end as you roll.

    5. After you have formed your roll, use a sharp knife to cut it into 8 equal pieces. Serve alongside soy sauce for dipping and enjoy!

    Ingredients:

    -1 pound lean ground beef
    -2 tablespoons olive oil
    -2 cloves garlic, minced
    -1 large yellow squash, sliced into thin strips
    -1 small onion, diced
    -1 red bell pepper, diced
    -1 teaspoon ground ginger
    -1 teaspoon ground cumin
    -Salt and pepper to taste

    Instructions:

    1. Heat the olive oil in a large skillet over medium heat. Add the garlic and sauté for 1 minute.
    2. Add the ground beef to the skillet and cook until browned, about 5 minutes. Break apart the beef with a wooden spoon as it cooks.
    3. Add the yellow squash, onion, and bell pepper to the skillet and cook until the vegetables are tender, about 7 minutes.
    4. Add the ginger, cumin, salt, and pepper to the skillet and cook for an additional 2 minutes. Stir everything together well so that all of the ingredients are evenly coated with spices.
