Cook Like a Pro at Home: Delicious Shrimp & Lobster Bisque
Shrimp and Lobster Bisque – A Recipe for the Stay at Home Parent
As a stay at home parent, it can be tricky to find time to prepare meals for the family. But with a little bit of creativity and some simple ingredients, any parent can whip up a delicious, homemade meal. A great example of this is shrimp and lobster bisque – a savory, creamy dish that is sure to please even the pickiest of eaters.
The ingredients for this recipe are fairly simple: two tablespoons of butter, one tablespoon of all-purpose flour, one cup of chopped onion, one cup of chopped celery, two cloves of garlic minced, one teaspoon of dried thyme leaves, two cups of chicken broth, one can (14 oz) of diced tomatoes with juice, two pounds of peeled deveined shrimp and one pound of cooked lobster meat.
To begin, melt the butter in a large saucepan on medium heat. Add the flour and cook for 1-2 minutes or until golden brown. Then add the onion and celery and cook until softened. Add the garlic and thyme leaves and sauté for another minute or two. Add in the chicken broth and diced tomatoes with juice and bring to a gentle boil. Simmer for 10 minutes or until the vegetables are tender.
Next add in the shrimp and lobster meat. Cook until shrimp is cooked through, about 5 minutes or so. Finally remove from heat and let cool slightly before transferring to a blender or food processor. Blend until smooth then pour back into the saucepan over low heat. Add salt and pepper to taste then let simmer for another 5 minutes or so before serving.

And here’s an added bonus; this dish has a special story behind it! The original recipe was created by my grandmother in the 1950s when she was raising five children as a stay at home mom. She served up this bisque often as it was easy to make with ingredients she had on hand but also made an impressive meal when company came over – so it was truly a win-win recipe!

Paella – A Stay at Home Parent’s Dream Dish
As a stay at home parent, I often find myself in the kitchen at some point in the day. Whether it’s making a quick breakfast before the kids get up, or preparing dinner after the little ones have gone to bed, I am always looking for new dishes to make for my family. This is why I love paella. Not only is it a delicious one-pot meal that everyone in my family loves, but it is also incredibly easy to make.
When I first tried paella, I was surprised by how much flavor was packed into this simple dish. It’s made with saffron-infused rice, vegetables, shrimp, and chicken and cooked together in a flavorful broth. The combination of ingredients makes a delicious and filling meal that can easily feed an entire family. The great thing about paella is that you can easily switch up the ingredients to make it your own. For example, you could add chorizo and clams to give it a more traditional Spanish flavor.
One of my favorite stories about paella is one my parents used to tell me when I was a child. My father used to tell me about his own paella recipe that he would make for special occasions growing up in Spain. He would take the traditional ingredients – rice, chicken, shrimp, and vegetables – and then add his own personal touch by adding chorizo sausage and clams to the mix. Ingredients:
2 tablespoons olive oil
1 onion, diced
2 cloves garlic, minced
2 cups long grain white rice
1 teaspoon smoked paprika
1 teaspoon saffron threads
3 cups chicken broth
1 red bell pepper, diced
1/2 cup peas
1/2 pound cooked shrimp
1/2 pound cooked chicken
Salt & pepper to tasteInstructions:
1. Heat olive oil in a large skillet over medium heat. Add onion and garlic and sauté until soft and fragrant, about 3 minutes. Add rice, paprika, and saffron threads and cook until all grains are coated in oil, about 2 minutes more.
2. Pour in chicken broth and bring to a boil over high heat. Once boiling, reduce heat to low and simmer for 15 minutes until rice is tender and liquid has been absorbed.
3. Add bell pepper, peas, shrimp and chicken pieces; season with salt & pepper to taste; stir well then cover skillet with lid or foil paper; continue cooking over low heat for an additional 10 minutes or until vegetables are tender but not mushy.
4. Serve paella hot with your favorite side dishes such as salad or crusty bread; enjoy!
