    1. Start by preparing the sushi rice according to the package directions. When it is finished cooking, stir in 1 teaspoon of rice vinegar and set aside.
    2. Cut the avocado, cucumber, and smoked salmon into thin strips.
    3. Place one sheet of nori seaweed on a bamboo rolling mat. Spread ¼ cup of cooked sushi rice onto the nori sheet with a spoon or rubber spatula.

    4. Once your roll is finished, use a sharp knife to cut it into 8 pieces. Serve with prepared sushi ginger, wasabi paste, and low sodium soy sauce for dipping!
