2. Once the rice is finished cooking, transfer it to a large bowl and let it cool. In a small bowl, mix together the vinegar, sugar, and salt until combined. Pour this mixture over the cooled rice and use a wooden spoon or spatula to mix everything together until evenly coated.
3. Now you’re ready to start making your sushi rolls! Place one sheet of nori on a cutting board or clean surface and spread a layer of cooled sushi rice over it, leaving an inch around each edge without any rice. Place your toppings—in this case smoked salmon, imitation crabmeat, and avocado slices—in straight lines across the middle of the sheet.
4. Start rolling from one end to the other until you have rolled up your sheet with all its tasty toppings inside! To make sure your roll stays together use your fingers to press down lightly along each end as you roll.
5. After you have formed your roll, use a sharp knife to cut it into 8 equal pieces. Serve alongside soy sauce for dipping and enjoy!
