    Instructions:

    1. Preheat oven to 350 degrees F. Grease a 9×13 inch baking dish with olive oil.
    2. Heat olive oil in a large skillet over medium heat. Add onion and garlic and cook until softened, about 5 minutes. Add shrimp and cook for 3 minutes, until shrimp is pink and cooked through. Season with oregano, basil, red pepper flakes, salt, and pepper.
    3. Add tomatoes to the skillet and cook for 5 minutes more. Stir in cooked rice and parsley until thoroughly combined. Pour into the prepared baking dish. Top with mozzarella and Parmesan cheese.
