    1. Heat the vegetable oil in a large pot over medium heat. Add the flour and whisk until it forms a paste. Cook for 3 minutes until it starts to turn golden brown. This is called the roux.
    2. Add the onions, bell peppers, celery, and garlic. Cook until vegetables are softened and lightly browned, about 8 minutes.
    3. Pour in the chicken stock, cayenne pepper, paprika, bay leaves, thyme, sausage slices, shrimp and crabmeat. Bring to a boil then reduce heat to low and simmer for 25 minutes or until vegetables are tender.
    4. Season with salt and pepper to taste then serve over cooked white rice or grits with hot sauce on the side if desired. Enjoy!

    Ingredients:

    5. Return veal shanks to the pot along with carrots, celery, peas, salt and pepper; stir to combine ingredients. Cover with lid or aluminum foil and place into preheated oven; bake for 1½ hours or until veal is tender.

    Ingredients:
    -6 cups of beef broth
    -2 cinnamon sticks
    -3 whole star anise
    -1 teaspoon of coriander seeds
    -3 cloves
    -1 teaspoon of fennel seeds
    -2 tablespoons of fish sauce
    -2 tablespoons of palm sugar
    -1 teaspoon of black pepper
    -8 ounces of flat rice noodles
    -1 pound of beef sirloin, thinly sliced
    -1 onion, thinly sliced
    -2 cloves of garlic, minced
    -2 limes, quartered
    -2 jalapenos, sliced (optional)
    -A handful of fresh cilantro leaves
    -A handful of fresh Thai basil leaves
    -A handful of fresh mint leaves
    -A handful of bean sprouts (optional)

    Instructions:

    1. In a large pot over medium heat, combine the beef broth, cinnamon sticks, star anise, coriander seeds, cloves, fennel seeds, fish sauce, palm sugar, and black pepper. Simmer for 10 minutes to allow the flavors to infuse the broth.
    2. Meanwhile, prepare the rice noodles according to package instructions. Once cooked through, drain and set aside.
    3. Add the beef slices to the broth and cook for 2 minutes until just cooked through. Add the onion and garlic and cook for 1 minute more.
    4. To serve the pho, divide the cooked noodles among four large soup bowls. Ladle the broth and beef over the noodles. Top with the fresh herbs, jalapenos (if using), bean sprouts (if using), and limes. Serve immediately while still hot!

    As a stay at home parent I know how difficult it can be to come up with new recipes that are healthy as well as quick to make.     As a stay at home parent, I know how difficult it can be to find ways to keep the kiddos happily engaged. One of my favorite activities is cooking together. Not only is it educational, but it also creates delicious and memorable dishes. One of my favorite recipes is Shepherd’s Pie. It’s a hearty and comforting meal that the whole family will love.

    To get started, gather all of the ingredients:
    -2 tablespoons of vegetable oil
    -1 large onion, diced
    -3 cloves of garlic, minced
    -1 pound of ground beef
    -1 teaspoon of dried thyme
    -2 tablespoons of Worcestershire sauce
    -1 tablespoon of tomato paste
    -1 cup of frozen corn
    -1 cup of frozen peas
    -2 cups of beef broth
    -3 large potatoes, peeled and diced
    -2 tablespoons of butter, melted
    -Salt and pepper to taste

    Now that we have all of the ingredients ready, let’s begin. Start by heating the oil in a large skillet over medium heat. Add in the onion and cook until it begins to soften, about 5 minutes. Add in the garlic and cook for another minute or two. Next, add in the ground beef and cook until it is no longer pink. Then add in the thyme, Worcestershire sauce, and tomato paste and stir to combine everything together. Let this simmer for about 5 minutes before adding in the frozen vegetables. Stir everything together and then add in the beef broth. Bring this mixture to a boil before reducing the heat to low. Simmer for 15 minutes or until most of the liquid has been absorbed.

    While that cooks, prepare the topping by bringing a pot filled with water to a boil. Add in the potatoes and cook until they are tender enough to mash, about 10 minutes. Drain them and then mash them with butter until they are smooth and creamy. Add salt and pepper to taste and set aside until you are ready to assemble your pie.

    Once your filling has finished cooking, preheat your oven to 375 degrees Fahrenheit and transfer everything into a 9×13 inch baking dish. Spread out the mashed potatoes on top as evenly as possible before placing it into your preheated oven. Bake for 25 minutes or until your topping is golden brown. Let cool for 10 minutes before serving so that everything has time to set up properly. Enjoy!

I’m always looking for new and exciting recipes that don’t require a ton of work or effort and still manage to hit the spot. That’s why I recently decided to make a beef pot roast with vegetables. This dish is incredibly easy to make, requires minimal prep time, and makes enough food to feed a family of four.

    The first step in making my beef pot roast with vegetables was to gather all the necessary ingredients. For this dish, I used one pound of chuck roast, two cloves of garlic, one onion, two carrots, two celery stalks, one tablespoon of tomato paste, one cup of beef broth, one teaspoon each of salt and pepper, and four potatoes. After I had all the ingredients together, I was ready to begin.

    I started by preheating my oven to 350°F and then chopped up my onion and garlic cloves before adding them into a large Dutch oven along with the beef broth. Once everything was combined in the Dutch oven, I added in the tomato paste and seasoned the mixture with salt and pepper before adding the chuck roast. With everything combined in the pot, I covered it tightly with aluminum foil and placed it in the preheated oven.

    After an hour of baking, I removed the foil from the pot and added in my carrots, celery stalks, and potatoes before replacing the foil and baking for another hour. Once this hour had passed, I removed my pot roast from the oven and let it rest for 10 minutes before serving.

    The result was an incredibly flavorful and tender meal that both my family and I thoroughly enjoyed. The chuck roast was incredibly tender while still having a nice bite to it and all of the vegetables were cooked to perfection. The tomato paste added a delicious flavor that really brought all of the ingredients together in a harmonious way. All in all, it was truly a great meal that didn’t take much time or effort to prepare but still managed to hit the spot!

    Barbecue ribs are a classic favorite for any family gathering or special occasion. When I was growing up, barbecues were always a staple at our family gatherings. My dad, who was an avid barbecuer, would always make the most delicious, smoky ribs that were tender and succulent. Now that I’m an adult and a stay at home parent, I’ve been able to recreate my dad’s barbecue ribs recipe and pass it on to future generations of my family.

    Ingredients:
    * 2-3 lbs of pork baby back ribs
    * 1 cup of your favorite barbecue sauce
    * 1/4 cup of brown sugar
    * 2 tablespoons of Worcestershire sauce
    * 1 tablespoon of garlic powder
    * 1 teaspoon of onion powder
    * 1 teaspoon of chili powder
    * 1 teaspoon of paprika
    * Salt and pepper to taste

    Instructions:
    1. Preheat the oven to 350°F and grease a baking sheet.
    2. Place the ribs on the greased baking sheet and season generously with salt and pepper.
    3. In a medium bowl, combine the barbecue sauce, brown sugar, Worcestershire sauce, garlic powder, onion powder, chili powder, paprika, and salt and pepper.
    4. Spread the sauce mixture over the ribs and bake in the preheated oven for 1 hour.
    5. Turn up the heat to 400°F and cook for another 15 minutes or until the ribs are cooked through and lightly charred on top.
    6. Let cool for 5 minutes before serving with extra barbecue sauce on the side.

    These barbecue ribs are absolutely mouthwatering! The combination of spices adds depth of flavor while the barbecue sauce adds a tangy sweetness that pairs perfectly with the pork ribs. Every time I make these ribs for my family, it brings back fond memories of my dad’s barbecues growing up and how he would put so much effort into making them just right every single time. These days I’m happy to be able to keep his legacy alive in our home by making these delicious barbecue ribs!
