    Dim Sum – A Delicious Stay at Home Recipe

    As a stay-at-home parent, I’m always looking for new and exciting recipes to make with my family. One of our family favorites is dim sum, a Chinese specialty typically served as small bite-sized portions. This delicious dish is the perfect combination of savory and sweet, and it’s one of the easiest meals you can make at home.

    To get started, gather your ingredients. You’ll need: 1 pound of pork, ½ pound of shrimp, 2 tablespoons of sesame oil, 2 tablespoons of soy sauce, 2 tablespoons of oyster sauce, 1 tablespoon of sugar, 2 teaspoons of minced ginger, 4 cloves of garlic (minced), 1 teaspoon of salt, 2 tablespoons of cornstarch, 1 package of wonton wrappers and 1 quart chicken broth.

    Begin by preparing the pork and shrimp. In a large bowl, combine the pork with the sesame oil, soy sauce, oyster sauce, sugar, ginger, garlic and salt. Mix until all ingredients are evenly distributed then add the cornstarch. Mix until all ingredients are evenly coated then set aside for 15 minutes.

    Next prepare the wonton wrappers. Take one wrapper at a time and place a spoonful of the pork mixture in the center. Wet your finger with water and run it around the edge; this will help seal the wrapper into a pillow shape. Place each filled wrapper on a plate until all are done then set aside.

    Now it’s time to begin cooking! Heat the chicken broth in a large pot over medium heat until boiling then slowly add in each wonton wrapper one at a time. Simmer for 3-5 minutes or until wrappers are cooked through then turn off heat. Serve warm with soy sauce or chili oil for dipping.

    Making dim sum is an incredibly rewarding experience that my family loves to do together while staying at home! Not only do we get to enjoy this delicious dish but we also get to create lasting memories with each other in the process. Whenever I think back on all those times making dim sum together as a family I can’t help but smile; it’s one of my favorite memories as a stay-at-home parent!

    Peking Duck Recipe

    A Peking Duck is a classic Chinese dish that has been around for centuries and is a popular treat for anyone who loves Chinese cuisine. Traditionally, this dish is made with whole ducks that have been marinated in a special mixture of spices and then hung to dry. The skin is then roasted until it’s crispy and flavor-packed, and the meat is served with sweet hoisin sauce, scallions, and cucumber slices. Making Peking Duck is an elaborate process, but the results are worth it!

    Ingredients:

    -2 whole ducks
    -2 tablespoons of dark soy sauce
    -1 tablespoon of sesame oil
    -1 tablespoon of Shaoxing wine
    -1 teaspoon of salt
    -1 teaspoon of sugar
    -1 teaspoon of five-spice powder
    -2 cloves of garlic, minced
    -2 inches of ginger, grated

    Instructions:
    1. Start by preparing the ducks by removing any excess fat or pin feathers. Cut off the wings and legs at the joints and set aside for later.
    2. In a medium bowl mix together the soy sauce, sesame oil, Shaoxing wine, salt, sugar, five-spice powder, garlic and ginger until combined. Rub this mixture all over the ducks and let them marinate overnight in the refrigerator.
    3. The next day, preheat your oven to 400 degrees Fahrenheit. Place the ducks in a roasting pan breast side up and roast for 45 minutes or until the skin is crispy and golden brown.
    4. Remove from the oven and let rest for 10 minutes before carving into thin slices. Serve with hoisin sauce, scallions and cucumber slices on the side if desired. Enjoy!
